These 4-Ingredient Texas Toast Meatball Melts are gooey, saucy, and ready in about 30 minutes with almost no prep. Just frozen meatballs, jarred marinara, mozzarella, and Gluten-Free Texas Toast for an easy weeknight dinner.
Preheat your oven to 400°F. Lightly grease a baking sheet with olive oil.
Arrange each slice of Texas Toast in a single layer on the prepared baking sheet. Bake for 10 minutes, or until lightly golden and crisp.
While the Texas Toast is baking, pour the marinara sauce into a saucepan and add the meatballs. Cover with a lid and let them simmer for about 10 minutes, or until the meatballs are heated through and reach an internal temperature of 165°F. Stir gently as needed to prevent the sauce from sticking.
Remove the Texas Toast from the oven. Using the back of a spoon, gently press into the center of each slice to create a well for the meatball. Be careful not to press all the way through the bread.
Sprinkle a small amount of shredded mozzarella cheese into the bottom of each well. Place one meatball into each well, then spoon about 1 tablespoon of marinara sauce over each meatball. Top with more shredded mozzarella cheese.
Return the baking sheet to the oven and bake at 400°F for 5–7 minutes, or until the mozzarella is melted and bubbly.
Carefully remove the melts from the oven, let them cool for a minute or two, and enjoy while warm!

Storage: Let the melts cool completely, then store in an airtight container in the refrigerator for up to 3 days.Freezing: I don't recommend freezing this recipe, as the Texas Toast can turn soggy once thawed. If you'd like to prep ahead, freeze the meatballs and marinara sauce separately, then toast fresh bread and assemble when you're ready to bake.Reheating: Warm in a 350°F oven for 8-10 minutes, or until heated through, to help keep the toast crisp. Microwaving works in a pinch, but the bread will be softer.
