Instructions
First, mix together all chicken seasonings and set aside.
Next, make sauce. Melt butter in a saucepan on stovetop over medium heat, then add remaining sauce ingredients.
Thirdly, let the sauce simmer for 5 minutes.
Meanwhile, preheat oven to 400°.
Afterwards, pound chicken to achieve a similar thickness for each breast, then place them into a bowl with the potatoes.
Before baking, drizzle olive oil over potatoes and chicken, and coat both chicken and potatoes with seasoning mixture.
Pour sauce mixture over the chicken and potatoes.
Add chicken, potatoes, and tomatoes to the pan.
Bake for about 34 minutes, or until chicken reaches an internal temperature of 165°F.
For more well-done potatoes, remove chicken and continue cooking until desired doneness (about 5-8 minutes)
Lastly, spoon sauce over the oven baked chicken and potatoes. Enjoy!
