  • First, mix together all chicken seasonings and set aside.
  • Next, make sauce. Melt butter in a saucepan on stovetop over medium heat, then add remaining sauce ingredients.
  • Thirdly, let the sauce simmer for 5 minutes.
  • Meanwhile, preheat oven to 400°.
  • Afterwards, pound chicken to achieve a similar thickness for each breast and lay chicken breast and potatoes on sheet pan.
  • Before baking, drizzle olive oil over potatoes and chicken, and coat both chicken and potatoes with seasoning mixture.
  • Pour sauce mixture over chicken.
  • Add chicken, potatoes, and tomatoes to the pan.
  • Bake for about 34 minutes, or until chicken reaches an internal temperature of 165°F.
  • For more well-done potatoes, remove chicken and continue cooking until desired doneness (about 5-8 minutes)
  • Lastly, spoon sauce over the oven baked chicken and potatoes. Enjoy!
