This Chicken Parmesan Mummy Garlic Bread is a fun, savory Halloween snack made with gluten-free Texas toast, shredded rotisserie chicken, marinara, and mozzarella cheese stick "bandages." Ready in about 25 minutes!
Preheat the oven to 375°F. Lightly grease a baking sheet.
Place the 6 slices of Texas toast on the baking sheet without letting them touch. Bake for 7 minutes to soften.
While the toast bakes, cut the mozzarella sticks in half, then pull them into strips about ¼ inch wide. Shred one cheese stick into very small pieces for the bottom layer.
Carefully remove the toast from the oven. Using the back of a spoon, press a small well into the center of each slice.
Place a few small shreds of cheese into each well, then add about 1 tablespoon of shredded chicken.
Spoon about 2 tablespoons of marinara onto each slice.
Layer 2 of the larger cheese strips in an "X" across the bottom of each toast and again across the top.
Bake at 400°F for 5-8 minutes, until the cheese has melted.
Add two googly eyes near the top of each mummy and serve warm.
Notes
Storage: Let the mummies cool completely, then store in an airtight container in the refrigerator for up to 3 days.Reheating: Warm in a 350°F oven for 5-8 minutes, or until heated through, to help keep the toast crisp. Microwaving works in a pinch, but the bread will be softer.
