This Marry Me chicken puff pastry features golden, flaky puff pastry filled with a blend of chicken, vegetables, Italian seasonings, and mozzarella cheese.
Preheat the oven to 420 degrees and line a baking sheet with parchment paper.
Add the chicken to a food processor and blend until very fine. Then, place it in a bowl.
Heat the sun-dried tomato oil and butter in a large skillet over medium heat. Then, saute the minced onion, sun-dried tomatoes, mushrooms, spinach, and tomato paste for 2 minutes until fragrant.
Add the chicken broth, stir well, and continue cooking until the spinach begins to wilt.
Add the chicken and mix well. Cook on low for 3 to 4 minutes so the chicken can absorb the flavors.
Cut the puff pastry sheets into the shape of your choice. I made triangles.
Place 1 tablespoon of the chicken mixture on the pastry and spread it out evenly. Then, add a small amount of mozzarella.
Fold the pastry dough over the filling and press the sides down with a fork.
Place the pastries about 1 inch apart on the prepared baking sheet and brush them with the egg wash. Bake for 10 minutes or until golden.
