Crispy Air Fried Parmesan Potatoes

These potatoes came out exactly how I was hoping they would - crispy, seasoned to perfection, and deliciously addictive. What I found to be particularly amazing about these golden-brown beauties was that the crunch from the first bite dazzled me, then gave way to the tenderness of the inside of the potato.

Equipment

Air Fryer If using a conventional oven, use convection setting if possible

Ingredients

4 large red potatoes
¼ cup parmesan cheese grated
1 teaspoon paprika
1 ½ teaspoon salt
1 tablespoon avocado oil
1 teaspoon fresh parsley chopped

Instructions

Rinse and scrub potatoes.
Place potatoes in a 3-to-4-quart pot on the stovetop and add enough cold water to cover potatoes by a few inches.
Turn heat to high and then bring potatoes in water to a boil.
Boil for 13 minutes, or until just about fork tender.
Drain and cool potatoes for a few minutes, until they are not too hot to handle.
Slice potatoes vertically, into circles, and gently place potatoes in a large bowl.
Add oil and all seasonings to bowl and toss to coat generously.
Place seasoned potatoes in air fryer basket at 400°F for about 9 minutes, then flip them over.
Cook potatoes for another 7-10 minutes, or until evenly golden brown and crispy.
Top with additional cheese, or parsley if desired.
