These crispy air fried parmesan potatoes became an instant favorite with my family. On the weekends, I love to experiment with new recipe ideas and techniques. One weekend, I decided to try something new in my air fryer. These potatoes came out exactly how I was hoping they would - crispy, seasoned to perfection, and deliciously addictive. What I found to be particularly amazing about these golden-brown beauties was that the crunch from the first bite dazzled me, then gave way to the tenderness of the inside of the potato. One bite took me to parmesan lover's heaven! These potatoes are super easy to make, and this recipe is excellent when you're short on time.

Ingredients
- red potatoes
- parmesan cheese
- paprika
- salt
- avocado oil
- fresh parsley

Instructions
- Rinse and scrub potatoes
- Place potatoes in a 3-to-4-quart pot on the stovetop and add enough cold water to cover potatoes by a few inches.
- Turn heat to high and then bring potatoes in water to a boil.
- Boil for 13 minutes, or until just about fork tender.
- Drain and cool potatoes for a few minutes, until they are not too hot to handle.
- Slice potatoes vertically, into circles, and gently place potatoes in a large bowl.
- Add oil and all seasonings to bowl and toss to coat generously.
- Place seasoned potatoes in air fryer basket at 400°F for about 9 minutes, then flip them over.
- Cook potatoes for another 7-10 minutes, or until evenly golden brown and crispy.
- Top with additional cheese, or parsley if desired.
Substitutions
Although red potatoes are ideal because of their mid-range starch content, and sweet flavor, you may use another type of potato instead (e.g. russet, Yukon gold). The cooking time may vary depending on the type of potato you choose. Also, if you don't have fresh parsley on hand, you may substitute dried parsley, but double the amount of the dried herb.
Variations
Regardless of the dish that you are pairing these potatoes with, you can alter the seasonings to fit your menu. For example, try using cilantro instead of parsley, swap the parmesan for Cotija or Queso Fresco cheese, and serve them with Chili Lime Chicken Tenders.
Equipment
Although an air fryer is recommended for this recipe, you may use a conventional oven set to the same temperature. If you have a convection setting on your oven, this is a perfect time to use it so you will achieve a similar result as an air fryer.
Storage
Store leftovers in an airtight container in the refrigerator for up to 5 days.
Top tip
Don't skip the boiling step! By boiling the potatoes prior to air frying them, you are starting the important process of breaking down the starch and natural sugar in the potatoes. Hence, you will achieve the ideal gorgeous golden-brown color and perfectly crisp exterior by using this method.
