Move over pumpkin spice and bring the ultimate taste of the season to the table with these light, airy, fluffy Gluten-Free Gingerbread Dairy-Free Waffles. Packed with aromatic warm spices, they will perfume your entire house as they cook. Not only are they incredibly decadent and delicious, they’re also refined sugar-free, and dairy-free!
Turn on waffle maker and allow to heat up while prepping the batter.
In a large bowl, combine all dry ingredients:gluten free flour, baking powder, coconut sugar, salt, cinnamon, cloves, ginger, and nutmeg. Whisk well.
In another bowl, combine eggs, coconut oil, vanilla extract, maple syrup, and molasses.
Once combined, add milk and whisk again.
Then, pour dry ingredients into the wet ingredients and mix well using a rubber spatula until fully combined.
Lastly, coat waffle maker with coconut oil using a pastry brush.
Pour the pancake batter evenly over the waffle maker and allow to cook according to the directions on your waffle maker.
Once finished, I topped these off with Nutiva coconut manna, powdered sugar, and maple syrup. Additional cinnamon is optional.

Top Tips:
Allow all of your ingredients like the almond milk and eggs to come to room temperature before mixing together your batter. This will help it come together faster and smoother.
Don’t over-mix your batter. This will ensure that the waffles have a tender bite.
Double and triple up on the recipe. These freeze well!
Always check the date on your spices. If you don’t remember the last time you used the cloves or ginger, it’s time to replace them. Fresh spices will always give the best flavor.
