Why you will love this recipe
- Easy Process - there is nothing complicated about this gingerbread waffle recipe. Simply mix together your dry ingredients, and wet ingredients, and then combine them. Then simply cook them up according to the directions of your waffle maker. This is a fun recipe the entire family can get involved in.
- Flavor Profile - If you love gingerbread cookies or gingerbread, this is for you. It gives all of that classic gingerbread flavor with the warmth of ginger, cinnamon, and nutmeg with the deep slightly bitter sweetness of molasses. This truly is a taste of the holidays.
- Clean Ingredients - Skip the processed white sugar and turn to brown coconut sugar and maple syrup. These just-sweet enough waffles are filled with ingredients you can feel good about. And unlike a boxed mix, there’s no mystery ingredients you can’t pronounce.
Ingredients
- Gluten-Free Flour - Using a 1:1 flour makes it easy to measure for this recipe. Make sure to read the labels as some gluten-free flours contain powdered milk. Bob’s Red Mill is my personal favorite.
- Spices - Ground ginger, cinnamon, cloves, and nutmeg bring all of that spicy, aromatic warmth while salt enhances all of the flavors of the ingredients.
- Baking Powder
- Organic Brown Coconut Sugar - Adds a subtle sweetness and slight caramel flavor. Coconut sugar is also lower on the glycemic scale than white sugar.
- Nutiva Liquid Coconut Oil - Nutiva uses a USDA-certified organic process to remove the fats from virgin coconut oil resulting in an oil that remains liquid even in cooler temperatures. Its neutral flavor makes it ideal for baking, sauteing, salad dressings, and even smoothies!
- Eggs
- Almond Milk
- Maple Syrup - Adds delicate sweetness that compliments the warm spices.
- Vanilla - The better the quality of the vanilla, the more pronounced the flavor. This adds that warmth and slight floral note.
- Molasses - A classic trademark of gingerbread this adds richness and depth.
Instructions
- Turn on your waffle maker and allow it to preheat.
- Add all of your dry ingredients to a large bowl and whisk them together.
- In a separate bowl add the eggs, vanilla, coconut oil, molasses, and maple syrup. Whisk to combine. Add the almond milk and whisk again until the liquids are fully mixed.
- Carefully pour the dry ingredients into the wet ingredients. Use a spatula to gently fold the batter over until all of the ingredients are combined.
- Use a pastry brush to lightly oil the waffle maker with coconut oil.
- Carefully pour the batter over the waffle maker. Close it up and allow the waffles to bake according to your waffle maker's directions.
- To assemble your waffles top them with Nutiva coconut manna, powdered sugar, and maple syrup.
Variations
- This recipe can be made with dairy. It can also be made with other types of dairy-free milk such as oat milk. Make sure that you’re using nonflavored milk so you don’t add any additional sugar.
- For a hint of citrus add a teaspoon or two of orange zest into the batter.
- Make these extra special and sprinkle in mini chocolate chips when making these.
- Chop up pecans or walnuts and sprinkle into the batter for a little crunch.

How to Freeze Gluten-Free Waffles
- Waffles are a great item to meal prep with. Double up the recipe and enjoy these when life gets busy!

- Once cooled place them on a baking sheet lined with either parchment or wax paper. Place the baking sheet in the freezer and allow the waffles to individually freeze, for about an hour.
- Once frozen transfer the waffles to freezer-safe zip-top bags.
How to Reheat Gluten-Free Waffles
- Preheat oven or air fryer to 350 ℉.

Tips
- Allow all of your ingredients like the almond milk and eggs to come to room temperature before mixing together your batter. This will help it come together faster and smoother.
