  • Preheat the oven to 400 ℉. Make sure to wash and pat dry the salmon fillets
  • Using a cast iron porcelain pan or regular cast iron pan, lightly grease the bottom of the pan with olive oil, then arrange the 3 salmon fillets into the pan. 
  • Then place the tomatoes around the sides of the pan lining the salmon. In a small bowl, add the butter and place into the microwave.
  • Using the melt function, melt the butter just until a liquid is formed.
  • Next, remove the butter from the microwave and add the seasonings:salt, garlic powder, Italian seasoning, thyme, and minced garlic. Stir this well. 
  • Then, pour the mixture over the tomatoes and salmon.
  •  Lastly, gently sprinkle the Parmesan cheese over the salmon and tomatoes. 
  • Bake uncovered for 8-12 minute until an internal temperature of 145 ℉ has been met.
  • Then, broil the salmon dish for 3 minutes. 

Notes

Top Tips:
    • Salmon is done baking when the internal temperature reaches 145 ℉, measured in the thickest part of the salmon fillet. Another way to tell if your salmon has finished baking is to gently press down on the top of the fillet with a fork. If the flesh of the salmon begins to flake, it is all done.
  • To preserve the shelf life of your baked salmon, allow it to come to room temperature before placing in the refrigerator. Once it has reached room temperature, refrigerate in an airtight container for up to four days.
