Walnut Butter Cookies With Apples have all the perfect fall and winter flavors. With the combination of cinnamon, apple pie spice, and spiced walnuts these are a true hit with everyone.
In a medium bowl, combine flour, baking soda, cinnamon, apple pie spice, and salt and set aside.
In a mixer using a paddle attachment, mix together the butter and both sugars until creamy (about 1 ½ minutes).
Add eggs in one at a time mixing lightly after each one.
Then mix in the vanilla bean paste.
Gently pour in the dry ingredients and mix on low until incorporated then mix on medium high until fully combined.
Lastly, fold in the walnuts using a rubber spatula.
Using a 2 inch cookie scoop, place the cookie dough onto prepared baking sheet.
Add any extra chopped walnuts to the tops of the cookie dough. Bake for 13-16 minutes until the edges are slightly brown.
Remove cookies from oven and allow to cool for 5 minutes before placing on a baking rack.
Combine all drizzle ingredients in a measuring cup and mix well.
Adjust the milk until you have a slightly thick yet still runny consistency.
Drizzle over cookies and allow to dry.
Serve cookies at room temperature or microwave for 10-12 seconds.

Top Tips:
Always use room-temperature eggs and butter to prevent clumping.
Do not overbake the cookies to prevent hardening. Remove from the oven just as the edges start to brown.
