    Why you will love this recipe

    • These cookies are both gluten-free and dairy-free, but you could easily swap and use flu gluten flour and regular dairy butter without negatively affecting the taste or texture. 
    • These cookies keep really well in an airtight container and can be eaten at room temperature. If you are looking for an extra special treat, place these in the microwave for 10-12 seconds and you will be in love at first bite! Of course, nothing is better than a fresh cookie warm from the oven with a glass of milk, though!

    Gluten-free flour: my go-to gluten-free flour is Bob Red Mill GF 1:1 flour

    Apple pie spice: this gives these apple pie cookies the perfect hint of apple pie 

    Cinnamon: adding more fall flavor to the cookies 

    Baking soda: encourages spreading in the cookies 

    Eggs: promote fluffiness within the cookies 

    Vanilla bean paste: always use a quality gluten-free vanilla bean paste. My favorite is Singing Dog Vanilla.

    Apple pie spice - I recommend OliveNation apple spice seasoning. Use code NK15 for 15% off.

    How to Make Walnut Butter Cookies with Apples

    • Preheat oven to 350°F. Line a baking sheet with parchment paper. 
    • In a medium bowl, combine flour, baking soda, cinnamon, apple pie spice, and salt and set aside. 
    • In a mixer using a paddle attachment, mix together the butter and both sugars until creamy (about 1 ½ minutes). Add eggs in one at a time mixing lightly after each one. Then mix in the vanilla bean paste. 
    • Gently pour in the dry ingredients and mix on low until incorporated then mix on medium-high until fully combined. 
    • Lastly, fold in the walnuts using a rubber spatula. 
    • Using a 2-inch cookie scoop, place the cookie dough onto a prepared baking sheet. Add any extra chopped walnuts to the tops of the cookie dough. Bake for 13-16 minutes until the edges are slightly brown. 
    • Remove cookies from the oven and allow them to cool for 5 minutes before placing them on a baking rack. 
    • Combine all drizzle ingredients in a measuring cup and mix well. Adjust the milk until you have a slightly thick yet still runny consistency. Drizzle over cookies and allow to dry. 
    • Serve cookies at room temperature or microwave for 10-12 seconds.

    Expert Tips

    Always use room-temperature eggs and butter to prevent clumping. 

    So not overbake the cookies to prevent hardening. Remove from the oven just as the edges start to brown.

    • ½ tablespoon Vanilla Bean paste
    • 2 eggs room temperature
    • 1 stick dairy free butter softened
    • ½ cup brown sugar
    • ¾ cup sugar
    • ½ cup apple spice walnuts plus extra for the top

    Cinammon drizle

    • ½ cup Powdered Sugar
    • 2-3 teaspoon milk
    • ⅛ teaspoon Apple pie spice

    Instructions
