Ingredients for Valentines day sprinkles cookies

    • Flour - For gluten-free cookie recipes I like using King Arthur Measure for Measure flour. In addition to being gluten-free, it is also dairy-free.
    • Salt
    • Dairy-Free Butter - In addition to giving the cookies their moisture it also is the base for the creamy vanilla-almond buttercream frosting. Country Crock Dairy Free gives both the best flavor as well as texture keeping these cookies and buttercream frosting absolutely delicious!
    • Sugar - Besides white sugar for the cookies you’ll also need powdered sugar for the frosting. This will easily mix into the dairy-free buttercream frosting and give you that silky texture and just the right amount of sweetness.
    • Eggs
    • Vanilla - For the most flavor make sure you’re using a high-quality vanilla. Singing Dog Vanilla is my go-to and you’ll use it in both the cookies and also the frosting.
    • Almond Extract - This adds a slightly nutty flavor to the buttercream frosting and gives it an incredible depth of flavor. A little goes a long way.
    • Sprinkles - Is there anything happier than confetti of sprinkles on top of a sugar cookie? OliveNation makes the perfect festive sprinkles for all of your baking needs. You can use code NK15 for 15% off your order.
    • Wilton Rose Gel Color - Gel food coloring easily mixes into the frosting delivering that perfect Galentine’s shade.

    Instructions

    • Begin by preheating your oven to 350°F and then line a baking sheet with parchment paper.
    • Next add the flour, salt, and baking powder to a bowl and mix to combine.
    • Add the butter and sugar to a mixing bowl and mix and using an electric mixer, mix until it’s creamy, scraping down the sides if necessary.
    • Next add one egg at a time, mixing in between each egg. Then add the vanilla extract and mix.
    • Turn the mixer off and add half of the flour. Then mix it on low until just combined.
    • Finally, add the remaining flour and mix until just combined.
    • Use a 2” cookie scoop to portion out your sugar cookie dough, placing each cookie 2” apart on the prepared baking sheet.
    • Allow the cookies to bake for 9-12 minutes until they are slightly golden and the center is no longer gooey. Oven temperatures will vary. Mine takes nine minutes.
    • Let the cookies cool completely before frosting.
    • Let’s make dairy-free buttercream frosting! First, add the butter to a bowl and whip it for 3-4 minutes until it’s light and fluffy.
    • Next, add the vanilla and almond extracts as well as the salt and mix to combine.
    • Add half a cup of powdered sugar at a time with the mixer on medium-low speed, mixing until each half cup is incorporated before adding the next.
    • Finally, mix on high for 2-3 minutes until the frosting is light and fluffy.
    • Use a piping bag to pipe the frosting on to each cookie. When the frosting is still wet sprinkle on the sprinkles.

    Storage

These gluten-free and dairy-free frosted sugars will remain tender and fresh for up to a week. Keep them stored in an airtight container at room temperature to prevent the frosting from becoming too hard in the refrigerator. Once the frosting has dried you can stack them in a storage container with layers of wax paper or parchment paper between them to prevent them from sticking to each other.

    Top Tips

    • Make sure that all of your ingredients for both the gluten-free sugar cookies and the dairy-free buttercream are at room temperature. This will allow everything to mix together smoothly without over-mixing. This also includes your eggs.
    • If you don’t have a piping bag you can use an offset spatula to frost your cookies, or even a plastic zip bag with the corner snipped. They will still be pretty and festive!
    • Have fun customizing the colors for different holidays and occasions.
    • All ovens will vary slightly in temperature. Make sure to check your cookies at the 9-minute mark.
    • Always let your cookies cool completely before frosting them. Once you’ve achieved that gloriously creamy and fluffy frosting you don’t want it to melt.

    FAQ

Can gluten-free sugar cookies be made dairy-free as well?

Yes, this recipe uses plant-based butter. You can also make it with regular dairy butter.

Can gluten-free sugar cookie dough be frozen?

Yes. Wrap it tightly in plastic wrap and then place it in a freezer-safe bag making sure to let out all of the air. It will last for up to three months. The night before you plan on baking it, place it in the refrigerator so it can gently defrost.

What's the extra sugar for decorating cookies?

One of the simplest methods to add extra sugar in your cookies is by incorporating colorful sprinkles on the top.
