    These banana cottage cheese pancakes are a delicious, healthy way to start the day. Made with oats, bananas, and cottage cheese and using no refined sugar, these pancakes are as good for you as they are delicious!

    • Vanilla Extract: I prefer Singing Dog vanilla extract for its deep, rich vanilla flavor, quality, and purity.

    Flavor Variations

    • Berries: Fold your favorite berries into the batter for banana berry pancakes.
    • Ricotta Cheese: Ricotta cheese can be used in place of cottage cheese for super-rich, almost milky pancakes.
    • Nuts: Add chopped nuts to the batter for banana nut pancakes.

    How to Make Cottage Cheese Banana Pancakes

    1: Blend all the ingredients in a high-speed blender until a smooth, thick batter is formed.

    2: Preheat a skillet with coconut oil on medium heat. Then, pour 3 to 4 tablespoons of pancake batter onto the skillet for each pancake.

    3: Cook the pancakes until the edges are light brown and the tops are bubbly. Then, flip and cook again until golden. Repeat until all the pancakes are made, and enjoy!

    Hint

    Blend your pancake ingredients at 60-second intervals and scrape the blender down between intervals. This ensures everything is completely combined.

    Storage

    Refrigerate these pancakes for up to four days in an airtight container. For longer storage, place the pancakes in single layers separated with wax or parchment paper in an airtight, freezer-safe container and freeze for up to 2 months.

    To reheat the pancakes, defrost them if frozen. Then, microwave them at 30-second intervals until heated through.

    Tips for the Best Banana Oatmeal Cottage Cheese Pancakes

    • Use a high-speed blender if you have one. The extra power will quickly and efficiently blend all of the ingredients.
    • If you don't have a high-speed blender, pulse the ingredients at 60-second intervals, scraping down the blender between pulses. Repeat until the batter is fully blended.
    • Preheat the pan or skillet before pouring the batter onto it to ensure the pancakes cook evenly.

    Can you taste cottage cheese in pancakes?

    No, you wont be able to taste it. Cottage cheese has a very mild, neutral flavor, and that flavor is completely masked by the other ingredients in the pancake batter.

    What are gluten-free rolled oats?

    Oats are naturally gluten-free, however keep in mind many oat brands are prepared in factories that also process wheat products. Gluten-free oats are oats that are prepared and packaged in facilities that don't process any products containing gluten.

    Is banana cottage cheese pancake batter supposed to be thick?

    Yes, it is. The batter will be quite thick, in fact. That's totally normal. Don't try to thin it out to traditional pancake batter consistency or it will be far too watery.

    Banana Cottage Cheese Pancakes

    These banana cottage cheese pancakes are golden on the outside, fluffy on the inside, and loaded with sweet banana flavor.

    Equipment

    • Measuring cups
    • Measuring spoons
    • High speed blender
    • Large skillet

    Ingredients
      

    • 1 ½ cups cottage cheese
    • 1 ½ cups rolled oats gluten-free
    • 3 teaspoon baking powder
    • 2 eggs large
    • 1 banana medium
    • 1 teaspoon Singing Dog vanilla
    • 1 tablespoon maple syrup
    • 1 teaspoon coconut oil
    • coconut oil for cooking

    Instructions
     

    • Place all the pancake ingredients except the oil for cooking in a high-speed blender and blend for 60 seconds.
    • Scrape down the sides of the blender, stir the batter, and blend again.
    • Preheat a skillet with coconut oil on medium heat.
    • Pour about 3 to 4 tablespoons of batter for each pancake onto the skillet and cook for 90 seconds until the edges are golden and the tops are bubbly.
    • Flip the pancakes and cook for another 90 seconds until golden.

    Notes

    • Preheat the pan thoroughly for even cooking and the best texture. 
    • A high-speed blender is best, but you can use a regular blender. 
    • This recipe makes 12 to 14 pancakes - about enough for 4 people. 
    • Refrigerate these pancakes for up to 4 days in an airtight container. 
    • Freeze the pancakes for up to 3 months in an airtight, freezer-safe container. 
    • To reheat, defrost the pancakes if frozen, and microwave them at 1-minute intervals until hot.

      I loved making those pancakes and the cottage cheese edition is great. They were absolutely delicious and I will definitely make them again. I added some of vanilla and I topped them with quince jam and yoghurt 🤤🤤
