How to Make Cottage Cheese Banana Pancakes
1: Blend all the ingredients in a high-speed blender until a smooth, thick batter is formed.

2: Preheat a skillet with coconut oil on medium heat. Then, pour 3 to 4 tablespoons of pancake batter onto the skillet for each pancake.

3: Cook the pancakes until the edges are light brown and the tops are bubbly. Then, flip and cook again until golden. Repeat until all the pancakes are made, and enjoy!

Hint
Blend your pancake ingredients at 60-second intervals and scrape the blender down between intervals. This ensures everything is completely combined.
Storage
Refrigerate these pancakes for up to four days in an airtight container. For longer storage, place the pancakes in single layers separated with wax or parchment paper in an airtight, freezer-safe container and freeze for up to 2 months.
To reheat the pancakes, defrost them if frozen. Then, microwave them at 30-second intervals until heated through.

Banana Cottage Cheese Pancakes
Ingredients
- 1 ½ cups cottage cheese
- 1 ½ cups rolled oats gluten-free
- 3 teaspoon baking powder
- 2 eggs large
- 1 banana medium
- 1 teaspoon Singing Dog vanilla
- 1 tablespoon maple syrup
- 1 teaspoon coconut oil
- coconut oil for cooking
Instructions
- Place all the pancake ingredients except the oil for cooking in a high-speed blender and blend for 60 seconds.
- Scrape down the sides of the blender, stir the batter, and blend again.
- Preheat a skillet with coconut oil on medium heat.
- Pour about 3 to 4 tablespoons of batter for each pancake onto the skillet and cook for 90 seconds until the edges are golden and the tops are bubbly.
- Flip the pancakes and cook for another 90 seconds until golden.
