    Easy Process - There is nothing complicated about making this sheet pan pancake. Using a protein-rich baking mix made up of clean ingredients makes this a dish you can easily pull together any day of the week. 

    Minimal Ingredients - You only need 7 ingredients for this recipe, including water. 

    Customizable - Have fun topping this banana bread pancake with your favorite fruit, nuts, and seeds. You can even put different toppings in different sections. The pancake is your canvas for flavor.

    Ingredients

    • Naked Nutrition Naked Bake - This premium banana bread mix contains 15 grams of protein and only 5 grams of sugar. It’s gluten-free, soy-free, and free of additives and artificial sweeteners. It is also high in fiber and will leave you feeling satiated and full longer. Not only can you make these sheet pan pancakes with it but you can make regular pancakes, bake with it, and use it as a protein powder to make smoothies and shakes. This protein powder/baking mix controls metabolism regulates your appetite, and helps in optimal muscle growth and recovery. 
    • Water - This is all you need to mix together the batter for this banana bread pancake. Simple and completely fuss-free. 
    • Blueberries - While adding sweetness and texture, blueberries are also high in antioxidants, control blood sugar, are beneficial to heart health, and are high in Vitamin K. 
    • Banana - Adding fresh bananas doubles up the banana flavor. It also provides additional potassium, fiber, Vitamin C, and magnesium. 
    • Strawberries - Strawberries are rich in Vitamin C and other antioxidants. They add natural sweetness to these pancakes while also being low on the glycemic scale. 
    • Chocolate Chips - What goes better with banana bread than chocolate chips? You can use dairy-free chocolate chips, or dairy if that’s not an issue. 
    • Eggs - Just use only 1 egg.

    Instructions

    • Prepare your mise en place. Dice up your banana and strawberries and set them aside.
    • Preheat your oven to 350 °F.
    • Use a pastry brush to evenly lightly grease a baking sheet with coconut oil. 
    • Add the Naked Bake to a bowl along with water. Use a whisk to mix it together until smooth.
    • Add the egg and whisk well.
    • Carefully pour the batter into the prepared baking sheet.
    • Sprinkle your fruit and chocolate chips over the top of the batter.
    • Allow the pancake to bake for 7-10 minutes, or until a toothpick comes out clean.
    • Slice and enjoy!

    • Rimmed baking sheet 15x7

    Storage

    If you have leftovers of this sheet pan pancake, allow it to cool completely. You can cut it into individual squares and keep them in resealable plastic bags in the refrigerator. They will last for up to 2-3 days. To reheat them you can either microwave them until warmed through or gently reheat them in a skillet on low. They can also be reheated in the oven on a low setting. Place them on a baking sheet and cover them with foil.

    • Make sure that your sheet pan is fully greased with coconut oil for easy release. 
    • Because this is thin like an actual pancake, it cooks quickly. Keep an eye on it when it hits that seven-minute mark as every oven slightly varies. 
    • Don’t dice your strawberries too early ahead of time. They will release their juices. You don’t want to add too much moisture to the pancake batter.
    • You can mix and max your toppings, and even make sections of different toppings. Have fun making this your own!
