These gluten-free healthy banana waffles are a breakfast staple in my household. Not only are they gluten and refined sugar-free, but they are absolutely delicious and ready in about 5 minutes. Additionally, these waffles cook up light and crispy and are a perfect addition to your breakfast meal prep lineup.
No waffle iron? That's certainly no problem! This batter makes particularly excellent pancakes. Top these waffles with your favorite nut butter and maple syrup. Finally, for an added crunch, try topping with gluten free banana walnut granola.
These paleo banana waffles will emphatically become a new family favorite. Try them as an easy weekday breakfast when you're particularly crunched for time. Speaking of "crunch" try adding your favorite gluten-free granola as a topping option, or freshly sliced bananas for a healthy fruit topping. Lastly, try adding fresh blueberries as a topping option!
Ingredients
- Coconut oil: I like to use coconut oil to keep these waffles more on the healthy side.
- Eggs: These help to bind everything together and lend amazing texture.
- Bananas: Bananas give these muffins their naturally sweetened flavor.
- Vanilla extract: No waffle is ever complete without the subtle flavor that vanilla extract offers.
- Coconut flour: Coconut flour is going to lend a bit of moisture to these waffles. I use organic coconut flour from Bob's Red Mill
- Cinnamon: Cinnamon gives these banana muffins a nice aromatic flavor.
- Baking soda
- Salt: Salt will help the waffles rise resulting in fluffier waffles.

Instructions
- First, place all ingredients into a blender and then blend on high until the batter is completely smooth.
- Second, scrape down the sides and blend again for a few more seconds.
- Lastly, pour batter into a heated waffle maker and then allow to cook for about 5 minutes. The batter makes 5 regular-size square waffles.
Substitutions
You can certainly substitute the banana in this recipe for about ⅔ cup of cooked and thoroughly mashed sweet potato. If you follow an egg-free diet, you can make a flax or chia egg by combining 1 tablespoon of flax meal or chia seeds with 3 tablespoons of water to make one egg.
Equipment
Use a waffle maker for this recipe for the best results. However, if you do not have a waffle maker, this recipe will make pancakes.
Storage
Store waffles in an airtight container in the refrigerator for up to 5 days, or freeze them for up to one month.

Very good base recipe. I used 1 very ripe banana and a semi ripe plantain because that’s what I had in hand. I also ended up using about 5 spoons of coconut flour and added some almond milk to help with the consistency. Lastly, I added about two tablespoons of almond butter and a bit of apple cider vinegar. The waffles ended up being fluffy and soft. I toasted them for about 2 minutes and they were very good.
