    If you love lasagna but don't have the time, my Lazy Lasagna is calling your name! It's an easy recipe that only takes one pot and will have th whole family running to the dinner table for a hot meal together. All you need is some pasta, ground chicken, tomato sauce and some cheese and this super easy recipe will be ready in a just a few minutes!

    Lazy lasagna recipes always remind me of my grandmother. For special occasions she would roll out her pasta by hand for traditional lasagna or her famous ravioli, but, most of the time she kept it simple with a 4 ingredient lasagna. She always told me it was better to spend time at the table, than to be spending days in the kitchen. I think she exaggerated a bit, but having my own family now, I know exactly what she meant. 

    Her recipes have inspired dozens of my popular recipes. Chicken and Pasta Alfredo Bake, Steak Pasta Alfredo, and Chicken and Broccoli Lasagna are all strait from her recipe card box, made with a few modern day adjustments. 

    When she cooked, I was always in charge of dessert. I highly recommend my Pecan and Chocolate Chip Cookies or Nutella Buttercream Cake to round out your easy dinner with a sweet treat.

    • Ground Chicken: I used Springer Mountain Farms ground white meat chicken for this recipe. I always use this brand because they never uses antibiotics or hormones, and never add animal by-products to its feed. It's also American Humane Certified, which I really love.
    • Lasagna Noodles: I used DeLallo Gluten Free Lasagna Pasta. They are made in Italy and are a corn and rice base.
    • Pasta Sauce: I love marinara sauce for this recipe. It gives that classic Italian flavor with a little bit of a fresh finish!

    Variations

    • Use Beef: I used ground chicken for this recipe but you can easily switch it to ground beef for a different taste. 
    • Try Ravioli: Frozen ravioli are such an easy was to add flavor and extra cheese! They are a time saver but beware it will change the cook time for this recipe!
    • Other Pasta Options: This lazy lasagna pasta can be made with any noodle of your choosing. Just throw it in the pan and let it cook up to al dente perfection! You can also use traditional lasagna pasta, as long as you do not have a gluten allergy. 
    • Make it Extra Cheesy: I used shredded mozzarella for a light topping. Try adding ricotta cheese or cream cheese to really get that comfort food feel in the dish.

    How to Make Lazy Lasagna

    Step 1. In a 10x10 deep sauté pan, sauté the ground chicken on medium high heat with salt and pepper. Once the chicken is done, carefully remove it from the pan and drain any excess oil. Then set aside.

    Step 2. In the same pan, on medium heat, add the olive oil. Once the olive oil has heated up, sauté the onion, bell pepper, and minced garlic and seasonings (Italian and garlic powder).

    Step 3. Once the onion and bell pepper are translucent, add the tomato sauce and chicken broth and mix well. Then add the meat back in. Allow it to come to a slight boil before adding the lasagna pieces in by standing them up across the pan. Once they are all in, push them down into the sauce, making sure to cover them and add the lid.

    Step 4. Once the noodles are done and soft, remove the lid and add the cheese and fresh basil. Allow this to cook for 3 to 5 minutes until the cheese has melted.

    Step 5. Top with fresh basil and enjoy!

    Expert Tips

    • Adjust the Thickness: If your sauce is too thick, add a tablespoon of water at a time until it reaches your desired consistancy. If your lazy man lasagna is too thin, add in extra tomatoe paste.
    • Keep at a Light Boil: Only bring your sauce to a very slight boil after adding the noodles to help it from over cooking or getting to thick to fast.
    • Simmer for Longer: This is the part of the cooking where the flavors really develope. Give the dish time to come together and for the flavors to pop!
    • Mix Carefully: Use a folding motion to mix the pasta into the sauce to prevent breaking the lasagna noodles.

    Can I use ravioli to make make this recipe into Lazy Lasagna Ravioli?

    Yes! Simply switch out your lasagna noodles for ravioli. Add in your sauce, spices and seasoning as the recipe says and this will be a delicious substitution. Just be mindful that the cooking times will change based on brand and if they are frozen or fresh.

    What’s the best cheese for lasagna?

    For this recipe I stuck to shredded Mozzarella because it creates the best crust. I also love lazy lasagna with ricotta cheese because it is cream and helps give a very soft feel to the dish. 

    Can I use other pasta shapes?

    Yes! You can use the pasta shape of your choice. I love lasagna sheets to keep keep that classic feel with the dish. Penne, Fettuccine, or even Pappardelle are all great options if you want to mix things up.

    Can I make this with traditional pasta?

    Yes! All my recipes are gluten free but you can use pasta that has gluten in it as long as you do not have a gluten allergy.

    Ingredients
      

    • 14 pieces of lasagna sheets I used gluten free
    • 1 lb Springer Mountain Farms ground chicken breast
    • 1 small onion diced small
    • 1 red pepper diced small
    • 2 tablespoon minced garlic
    • 28 oz jar crushed tomatoes
    • 2 cups chicken broth
    • 1 cup mozzarella cheese
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 3 teaspoon italian seasoning
    • 1 teaspoon garlic powder
    • basil fresh
    • 1 tablespoon olive oil I used basil oil but regular works fine as well

    Instructions
     

    • In a 10x10 deep sauté pan, sauté the ground chicken on medium high heat with salt and pepper.

    Notes

    Storage
    • Refrigerate for up to 3 days in an airtight container. 
    • Reheat the entire dish in a skillet over medium-low heat or microwave individual portions at 1-minute intervals. 
    Tips
    • If your sauce is too thick at the end, slowly use the reserved pasta water to thin it out. I recommend only one to two tablespoons at a time, so it doesn't become runny.
    • Always add salt to your pasta water before boiling, to prevent the pasta from sticking. Additionally, you can run cold water over it after cooking,
