BBQ chicken and potatoes is an easy, delicious meal loaded with flavor. Tender, juicy chicken breast chunks, and crispy, seasoned, air-fried potatoes are covered in BBQ sauce, topped with cheese, and baked until melty and delicious.
Chicken is a great protein for cooking because it has a mild flavor that pairs well with just about any flavor you can think of, and it has a meaty texture that works well with everything from soups to pasta. Thanks to that combination, chicken dishes can be incredibly varied. This one gets back to basics, though.
This recipe is loaded with crispy, diced potatoes and bite-size chicken chunks that I coat in a homemade BBQ sauce and load up with mozzarella cheese. It's a delicious dish that's simple, easy, and so fast!

Ingredients
- Cubed Chicken Breasts: I prefer Springer Mountain Farms for their quality and commitment to antibiotics, hormones, or animal by-products in their feed.
- Diced Red Potatoes: The waxiness of red potatoes makes them ideal for roasting. They get crispy on the outside and soft on the inside while still retaining their shape.
- Gluten Free BBQ Sauce: Your favorite BBQ sauce is the shortcut to the recipe that gives the homemade sauce its classic flavor.
- Adobo: Adobo gives the sauce a savory, sweet, and tangy kick.
- Brown Sugar: Brown sugar adds depth of flavor and sweetness to the sauce.
- Seasonings: A blend of seasonings, including paprika and mustard, adds bold flavor to the entire dish.
- Mozzarella Cheese: Mozzarella cheese makes an ooey gooey finish on top of the dish.
See the recipe card at the end of the post for a full list of ingredients and their exact amounts.
Flavor Variations
- Extra Spicy: Add red pepper flakes or finely diced jalapenos to the sauce.
- Store-Bought BBQ Sauce: If you'd rather make things even faster, simply use store-bought BBQ sauce.
- Proteins: You can use chicken thighs, pork, beef, or even shellfish like shrimp for this recipe.
- Cheese: Try other cheeses like cheddar or Swiss for a different flavor.

Hint
Be sure you use an oven-safe skillet for this recipe! Normal skillets are not designed for oven use and may warp or crack.
Storage
Refrigerate this baked BBQ chicken and potatoes for up to 4 days in an air-tight, freezer-safe container. For longer storage, freeze it for up to 3 months in an air-tight, freezer-safe container. Defrost in the refrigerator overnight before reheating.
To reheat the chicken, place it in a baking dish, cover it with foil, and bake at 350 until heated through or simply place your desired portion in the microwave.
What to Serve with Skillet BBQ Chicken and Potatoes
The sweet and tangy flavor of the BBQ sauce combined with the tender chicken and crispy potatoes makes this a dish that pairs well with a variety of sides.
Serve simple vegetables like pan fried squash and zucchini or a flavorful salad on the side to create a full meal.
Chocolate is always a great choice for a rustic meal like this, so for dessert, try chocolate peanut butter cupcakes or white chocolate Reese's brownies.
Tips for the Best Chicken and Potatoes
- Wash your potatoes thoroughly to remove any dirt or debris.
- Be sure to place your potatoes in a single layer in the air fryer for even cooking.
- Heat up your oil before adding the chicken. This sears the outside of the chicken faster, locking in the juices.
- Always use an oven-safe skillet for a recipe like this. Skillets not rated for oven use may warp.

Frequently Asked Questions
For crispy skins, russet or Yukon Golds are excellent roasting potatoes. For potatoes that hold their shape better, you can't go wrong with red potatoes.
The short answer is no. The longer answer is any all-metal skillet is probably safe for oven use, but you should check the manufacturer to be sure. NEVER put a pan with a silicon or wooden handle in the oven, especially under the broiler. The wood will burn, and the silicon will melt.
No, they're not. While you might initially think something like BBQ sauce wouldn't have gluten, many sauces are typically made with ingredients like Worcestershire sauce and soy sauce, all of which have gluten. In addition, many sauces contain gluten flours and powders for thickening. It's best to find a BBQ sauce specifically labeled as gluten free.
