Cookies are one of my favorite treats to make for any holiday, especially Christmas. This time of year, I make everything from postcard Christmas cookies to walnut apple butter cookies or even simple Oreo sandwich cookies.

This year, I'm adding another delicious cookie variation to my rotation. These Christmas sandwich cookies are soft and chewy and stuffed full of buttercream. They also have super-fun holiday colored chips throughout.

    Ingredients

    Cookies

    • Gluten-Free Flour: I prefer Bob's Red Mill 1:1 gluten-free baking flour because I find it gives my baked goods the best flavor and texture.
    • Butter: Melted and cooled butter gives the cookies a rich flavor and helps keep them soft and chewy.
    • Mini Dark Chocolate Chips: OliveNation Barry Callebaut dark mini chips add rich, deep chocolate flavor to the cookies. Use code: NK15 for 15% off.
    • Holiday Compound Chips: OliveNation Holiday compound chips add sweet chocolate flavor and classic holiday color to the cookies. Use code: NK15 for 15% off.
    • Vanilla Extract: I prefer Singing Dog vanilla for its quality, purity, and deep vanilla flavor.

    Buttercream

    • Butter: Butter gives the frosting its rich, buttery flavor.
    • Powdered Sugar: Powdered sugar adds sweetness and body to the frosting.
    • Vanilla Extract: Vanilla gives the frosting a pronounced but not overpowering vanilla note.

See the recipe card at the end of the post for a full list of ingredients and their exact amounts.

    Flavor Variations

    • Baking Chips: Use your favorite chocolate chips and various sprinkles to create sandwich cookies perfect for any occasion.
    • Chocolate Chips: Use dark, semi-sweet, or even milk chocolate mini chips for these cookies. Your favorite one will work!
    • Buttercream: Add more holiday color to these cookies by using gel food coloring to make red, green, or blue buttercream frosting.
    • Gluten-Free Flour: You can use regular flour in equal amounts.

How to Make This Christmas Cookie Sandwich Recipe

    Cookies

1: Combine the dry cookie dough ingredients in a small bowl.

2: Beat the butter, sugars, and vanilla in a large bowl until creamy. Then, add the egg and mix until combined.

3: Slowly mix the dry ingredients into the wet ingredients until combined. Then, use a rubber spatula to fold in both mini chips.

Mixing bowl full of cookie dough.

4: Use a 2-tablespoon cookie scoop to place cookie dough balls about 2 inches apart on a prepared baking sheet. Top with more mini chocolate chips if you like.

5: Bake the cookies for 8 to 10 minutes. Then, remove them from the oven and let them cool for 5 minutes on the cookie sheet before transferring them to a wire rack to cool completely.

    Buttercream

1: Whip the butter in a large bowl until creamy. Then, add half the powdered sugar, salt, and vanilla and beat until blended.

2: Add the remaining powdered sugar and heavy cream. Beat on medium-high until smooth and creamy.

    Making the Sandwiches

1: Place half of the cooled cookies flat side up and pipe the entire surface with buttercream. Then, top with the remaining cookies. Enjoy!

    Hint

Be sure your cookies are FULLY cooled before you add the frosting. Even warm cookies will make the buttercream begin to get thin.

    Storage

Store these cookies in an air-tight container at room temperature for up to 3 days. For longer storage, refrigerate them for up to a week in an air-tight container.

What to Serve with Sandwich Christmas Cookies

These cookies are the perfect addition to a larger holiday dessert table alongside other festive treats like this puff pastry Nutella Christmas tree, white chocolate Christmas Oreos, pumpkin spice cake, and your other favorites.

Tips for the Best Christmas Sandwich Cookies

    • Mix your cookie dough until just combined. Don't overwork it, or the cookies will become dense and tough.
    • Use a 1:1 gluten-free baking flour for these cookies to avoid the hassle of calculating additions like xanthan gum and other additives.
    • A stand or hand mixer is the easiest way to make your buttercream frosting.
    • Be sure the cookies have fully cooled before frosting them. If the buttercream gets warm, it will thin and lose its wonderful consistency.
    • For perfectly round cookies, place a coffee mug over them while hot and swirl it in a circular motion.

    Frequently Asked Questions

    What are sandwich cookies?

Sandwich cookies are two cookies with a sweet filling sandwiched between them. The filling used varies between recipes but is usually some sort of frosting.

Are sandwich cookies and whoopie pies the same?

Sort of. All whoopie pies are sandwich cookies, but not all sandwich cookies are whoopie pies. While sandwich cookies can be made with any kind of cookie, true whoopie pies are made with cookies that are really more like small cakes.

    Why were my cookies crumbly?

Crumbly cookies are usually the result of either using too much flour or baking them for too long. Be sure to measure your flour correctly and remove the cookies as soon as the edges are browned to prevent dry, crumbly cookies.

How do you measure flour for baking?

To properly measure flour, loosely spoon it into your measuring cup and level it off with a knife. Never scoop the flour out directly with the measuring cup. For even more precise measuring, use a food scale.
