These Christmas cookie sandwiches are the perfect gluten-free treat this holiday season. Rich buttercream frosting is sandwiched between two delicious chocolate chip cookies loaded with holiday colored baking chips.
Cookies are one of my favorite treats to make for any holiday, especially Christmas. This time of year, I make everything from postcard Christmas cookies to walnut apple butter cookies.
This year, I'm adding another delicious cookie variation to my rotation. These Christmas sandwich cookies are soft and chewy and stuffed full of buttercream. They also have super-fun holiday colored chips throughout.

How to Make This Christmas Cookie Sandwich Recipe
Cookies
1: Combine the dry cookie dough ingredients in a small bowl.
2: Beat the butter, sugars, and vanilla in a large bowl until creamy. Then, add the egg and mix until combined.
3: Slowly mix the dry ingredients into the wet ingredients until combined. Then, use a rubber spatula to fold in both mini chips.
4: Use a 2-tablespoon cookie scoop to place cookie dough balls about 2 inches apart on a prepared baking sheet. Top with more mini chocolate chips if you like.
5: Bake the cookies for 8 to 10 minutes. Then, remove them from the oven and let them cool for 5 minutes on the cookie sheet before transferring them to a wire rack to cool completely.
Buttercream
1: Whip the butter in a large bowl until creamy. Then, add half the powdered sugar, salt, and vanilla and beat until blended.
2: Add the remaining powdered sugar and heavy cream. Beat on medium-high until smooth and creamy.
Making the Sandwiches
1: Place half of the cooled cookies flat side up and pipe the entire surface with buttercream. Then, top with the remaining cookies. Enjoy!
Hint
Be sure your cookies are FULLY cooled before you add the frosting. Even warm cookies will make the buttercream begin to get thin.
Storage
Store these cookies in an air-tight container at room temperature for up to 3 days. For longer storage, refrigerate them for up to a week in an air-tight container.

Tips for the Best Christmas Sandwich Cookies
- Mix your cookie dough until just combined. Don't overwork it, or the cookies will become dense and tough.
- Use a 1:1 gluten-free baking flour for these cookies to avoid the hassle of calculating additions like xanthan gum and other additives.
- A stand or hand mixer is the easiest way to make your buttercream frosting.
- Be sure the cookies have fully cooled before frosting them. If the buttercream gets warm, it will thin and lose its wonderful consistency.
- For perfectly round cookies, place a coffee mug over them while hot and swirl it in a circular motion.

Crumbly cookies are usually the result of either using too much flour or baking them for too long. Be sure to measure your flour correctly and remove the cookies as soon as the edges are browned to prevent dry, crumbly cookies.

- 1 cup Bob's Red Mill 1:1 gluten free flour
- ½ teaspoon baking soda
- 2 tablespoon Bob's Red Mill 1:1 gluten free four
- ⅓ tsp salt
- 1 stick butter melted and cooled
- ½ cup brown sugar
- ¼ cup sugar
- 1 ½ teaspoon Singing Dog vanilla
- 1 egg room temperature
- 4 oz OliveNation Barry Callebaut Mini Dark Chocolate Chips
- 4 oz OliveNation Holiday Compound Chips
Buttercream Frosting
- 2 ¾ cups powdered sugar
- 1 stick butter softened
- 3 tablespoon heavy cream
- 1 ½ teaspoon Singing Dog vanilla
- Pinch of salt
Instructions
Cookies
- Preheat the oven to 375 degrees and line 2 baking sheets with parchment paper.
- Whisk the flour, baking soda, and salt in a small bowl.
- Beat the vanilla, brown sugar, sugar, and vanilla in a mixing bowl until creamy.
- Add the egg and mix until combined.
- Slowly mix the dry ingredients into the wet ingredients until combined.
- Gently fold the mini chocolate chips and compound chips into the batter with a rubber spatula.
- Use a 2 tablespoon cookie scoop to drop cookie dough rounds about 2 inches apart on the prepared baking sheets. Add more baking chips if desired.
- Bake the cookies for 8 to 10 minutes until the edges are golden.
- Remove the cookies and let them cool for 5 minutes on the cookie sheets. Then, transfer them to a wire rack to cool completely.
Buttercream Frosting
- Whip the butter on medium speed for 1 minute.
- Add half the powdered sugar, salt, and vanilla and mix for about 45 seconds until blended.
- Add the remaining powdered sugar and heavy cream and mix on medium-high speed for 1 to 2 minutes until rich and creamy.
Making the Sandwich Cookies
- Place half of the cookies with the flat side up on a clean surface.
- Pipe the buttercream frosting on the entire surface of the cookies.
- Gently place the remaining cookies on top of the frosting to create the sandwich cookies.
