Instructions
- First, mix together all of the dry seasonings and then set them aside.
- Next, make the sauce. Melt butter in a saucepan on stovetop over medium heat, then add remaining sauce ingredients.
- Thirdly, let sauce simmer for 5 minutes.
- Meanwhile, preheat oven to 400°F.
- Afterwards, pound chicken to achieve a similar thickness for each breast and lay chicken breast and potatoes on sheet pan.
- Before baking, drizzle olive oil over potatoes and chicken, and coat both chicken and potatoes with seasoning mixture.
- After ensuring that the chicken and potatoes are coated thoroughly, pour sauce mixture over chicken.
- Bake for about 34 minutes, or until brown sugar baked chicken reaches an internal temperature of 165°F.
- For more well-done potatoes, remove chicken and continue cooking until desired doneness (generally, about 5-8 minutes)
- Lastly, spoon sauce over chicken/and or potatoes. Enjoy!

Ok, these steps are confusing. In step 7, its pour sauce mixture over chicken and potatoes that were added to pan in step 6. Then…step 8 is add chicken, potatoes and tomatoes to pan…?! They were already there? But even more confusing: step 11 is to spoon sauce over chicken/potatoes…
So are we putting sauce on before or after cooking?
I think you really need to edit your recipe steps.

I am sorry, I think you are reading these wrong. Step 6 says to coat the chicken and potatoes with olive oil and seasoning. Then coat them in the sauce you made. Then you add them to the pan with the tomatoes. When you are done cooking, you can spoon more of the sauce that has fallen off the meat into the pan, back over the chicken and potatoes. Sorry for the confusion.

In the photo, it looks like there are cherry tomatoes in the pan with the potatoes and chicken, but they aren't in the recipe. Am I seeing things?

Thank you for this recipe. I just made it. I followed the recipe, & poured the sauce mixture (step 7) over the chicken before I put it in the oven. I noticed that step 10 says to spoon the sauce over the chicken and/ or potatoes, but I had already poured all of the sauce over the chicken. I think that the next time I make this recipe, I may pour some of the sauce over the chicken about half way through the cooking process, because the sauce burned in the pan. And then I will have sauce left to pour over everything after everything is cooked. Does that sound like it would work?

I really want to try try this recipe but I am afraid the chicken will get over cooked. Chicken breast only takes 15 min to bake normally.

Hello Rowena, Baking time will certainly depend upon the size of chicken breast you are baking. These breasts I use are quite thick and do require a longer baking time. For this, I always recommend using a thermometer to check the internal temperature of your chicken breasts and remove them once they reach an internal temperature of 165 degrees. I hope that helps.
