How to Make Spinach Artichoke Pasta

Step 1: Cook the pasta according to the directions for al dente. Sauté the spinach in a large skillet until wilted.

Step 2: Remove the spinach from the pan, pour out any liquid, and sauté the minced garlic, shallots, and seasonings in butter until fragrant.

Step 3: Add the cream cheese, sour cream, and heavy cream and bring to a very light boil. Then, add the parmesan cheese and stir until melted.

Step 4: Once the sauce is creamy, add the artichokes, lower the heat, and simmer until they're tender and heated through. Gently mix in the spinach and cooked pasta, and enjoy!

Ingredients
- 12 oz gluten free penne or regular pasta if no gluten allergy
- 6 tablespoon butter divided
- 2 cups spinach
- 1 tablespoon minced garlic
- 2 tablespoon shallots
- 1 teaspoon roasted garlic powder
- ½ teaspoon applewood smoked salt
- ¼ teaspoon pepper
- ½ teaspoon onion powder
- 4 oz cream cheese cubed
- 1 cup sour cream
- 1 cup heavy cream
- 1 cup parmesan cheese
- 16 oz artichoke hearts
Instructions
- Boil the pasta according to the directions for al dente. Then drain it and set it aside.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Then, add the diced spinach and cook for 1 to 2 minutes, stirring constantly until wilted. Remove the spinach from the pan and pour off any water.
- Add 4 tablespoons of butter to the same pan and saute the minced garlic, shallots, roasted garlic powder, smoked salt, pepper, and onion powder until fragrant.
- Add the heavy cream, cream cheese, and sour cream and bring to a slight boil. Then, add the parmesan cheese and stir until melted.
- Once creamy, add the artichokes and cook on medium-low for a minute.
- Add the spinach and cooked pasta, stir, and enjoy!
Notes
- Rinse the pasta with cold water after boiling it to stop the cooking process and prevent overcooking when added to the sauce.
- This recipe serves five.
- Freezing is not recommended due to the cream used in the recipe.
