    How to Make Sheet Pan Chicken and Sweet Potatoes

    Step 1. Preheat the oven to 425°. Next, wash the chicken thighs and pat them dry. Dice your sweet potatoes into quarters and put in a bowl.

    Step 2. In a small bowl, combine the smoked paprika, garlic powder, Italian seasoning, thyme, salt, and black pepper. Place your green beans in a large mixing bowl with the seasoning on top.

    Step 3. Add your chicken to the mixture and toss well with clean hands or gloves until everything is evenly coated. Now, gently pour the bowl onto a large sheet pan and arrange it for optimal cooking. Drizzle a touch of olive oil on top for an extra crisp.

    Step 4. Place in the preheated oven, and bake for 21 to 30 minutes, until the internal temperature of the chicken reaches 165°. Cooking time will depend on the size of the chicken.

    Expert Tips

    • Make Even Cuts: Cut the sweet potatoes into similar sizes. I went with each potato getting quartered or about 1-inch pieces. This helps them cook evenly and caramelize properly. 
    • Use a Meat Thermometer: I love using my ThermoPro Meat Thermometer to make sure my chicken is cooked just right.
    • Line Your Tray: Using parchment paper helps cut clean up time in half! This is not a mandatory step and you baking sheet can be used by itself without issue.

    Why are sheet pan meals so easy to make?

    Sheet pan meals are great because they just need to bake in the oven for 20-40 minutes depending on what ingredients you are using. The combination of short cook time and easy cleanup make them a wonderful option when you are not looking to mess up the whole kitchen to make a meal. 

    How do I know when my chicken is done?

    I love using my ThermoPro Meat Thermometer to make sure my chicken is cooked to perfection. just make sure each piece reaches an internal temperature of 165°F. Trust me, this is a MUST have gadget.

    Can I use other types of potatoes?

    Of course! Yukon Gold and red potatoes (or Russet) would be my recommendation for other types of potatoes but you can use any that are already in the house to help save time and money. Carrots are also a simple substitute.

    Notes

    Tips:
    • I like to use chicken thighs for this recipe because they stay moist while in the oven, however, if you would like to remove a bit of the fat, you can easily use boneless skinless chicken breasts.
    • You can easily use avocado oil in place of olive oil.
    • Always use a food thermometer to be sure the internal temperature of your chicken is 165° before removing from the oven. 
    Storage:
    • This recipe is perfect for meal prep and lasts up to four days in the refrigerator.
