Come April I am always ready for everything carrot because I just love carrot cake. I'm also bringing my Christmas cookie sandwiches to our annual gathering this year, and I love serving my chocolate coffee cookie sandwiches at any party.

Now, I've combined carrot cake and cookies to make these delicious carrot cake cookie sandwiches. The filling is classic cream cheese frosting, and the cookies are so soft and tender. If you love carrot cake, check out my Dairy Free Carrot Cake!

Why You'll Love These Carrot Cake Sandwich Cookies

    • Basic Ingredients: Every ingredient used in these cookies is a basic kitchen staple found in any grocery store.
    • Easy: The frosting filling and the carrot cake cookies are both quick and easy to make.
    • Classic Flavor: Carrot cake cookies and cream cheese frosting is the classic flavor combination.
    • Versatile: Carrot cake is great any time of year, and it's a standard for special occasions.

    Ingredients

See the recipe card at the end of the post for a full list of ingredients and their exact amounts.

    Carrot Cake Cookies

    Individual carrot cake cookie ingredients
    • Gluten-Free 1:1 Baking Flour: I prefer Bob's Red Mill 1:1 gluten-free flour because I find it gives my baked goods the best texture.
    • Softened Butter: Butter gives the cookies richness and the fat they need to bake.
    • Corn Starch: Corn starch gives the cookies a softer, chewier texture.
    • Vanilla Extract: I prefer Singing Dog vanilla extract for its quality, purity, and deep vanilla flavor.
    • Spices: A blend of cinnamon and nutmeg adds a warm flavor to the cookies.
    • Old-Fashioned Rolled Oats: Be sure to check the label to ensure the oats are processed in a gluten-free facility.
    • Sweetened Coconut: Coconut is a classic carrot cake ingredient.
    • Carrots: Finely grated carrots add moisture, flavor, and texture to the cookies.

    Cream Cheese Frosting

    Cream cheese frosting ingredients.
    • Softened Cream Cheese: Cream cheese gives the frosting its rich creaminess and tang.
    • Softened Butter: Butter mutes the tang of the cream cheese a bit and adds more richness.
    • Powdered Sugar: Powdered sugar gives the frosting body and its sweetness.
    • Vanilla Extract: I prefer Singing Dog vanilla extract for its quality, purity, and deep vanilla flavor.

    Flavor Variations

    • Dairy-Free: You can use dairy free butter and this dairy-free cream cheese frosting for a gluten and dairy-free version.
    • Chocolate Chips: Chocolate chips add a burst of flavor to the carrot cake cookies.
    • Buttercream: If you want an even sweeter cookie, use buttercream instead of cream cheese frosting.

How to Make Carrot Cake Sandwich Cookies

    Carrot Cake Cookies

1: Combine the dry ingredients in a medium bowl and set aside.

2: Beat the butter and sugars in a stand mixer with the paddle attachment until creamy. Then, add the vanilla and egg and beat until combined. Scrape down the bowl and mix again.

3: Slowly add the flour to the wet ingredients, beating on low until just combined. Scrape down the bowl and add the coconut, carrots, and oats. Mix again until just combined. Finally, cover the bowl with plastic wrap and chill for 30 minutes.

Bowlful of carrot cake cookie dough

4: Using a 2-inch cookie scoop, place uniform dough balls about two inches apart on two lined baking sheets. Then, bake until the edges of the cookies are brown but the centers are still underdone.

5: Remove the cookies from the oven and let them cool on the baking sheet for about five minutes, then transfer them to a wire cooling rack to cool completely.

    Cream Cheese Frosting

1: Beat the butter and cream cheese until creamy. Then, add the remaining ingredients until smooth.

    Bowlful of cream cheese frosting

2: Place half of the cookies flat side up and pipe the frosting over the entire surface. Then, top the frosted cookies with the remaining cookies. Enjoy!

    Expert Tips

    • Mix the carrot cake cookie ingredients until just combined for the best texture.
    • It's important to chill the cookie dough before baking them cookies. This keeps them fluffier.
    • Your cookies are supposed to be a bit raw in the middle when you take them out of the oven. Carryover cooking time finishes them to perfection.
    • Be sure the cookies are fully cooled before frosting them.
    • For perfectly round cookies, swirl the open end of a large coffee mug three to four times around each cookie as soon as you remove them from the oven.

What to Serve with Carrot Cake Sandwich Cookies

Serve these cookies with a glass of milk or a cup of coffee or tea. You can also serve them alongside other sweet hand-held treats like coconut chocolate chip cookies, heath bar brownies, or Christmas cookie sandwiches for a large holiday dessert spread.

    Frequently Asked Questions

    What are carrot cake cookies?

Carrot cake cookies are a cross between cookies and carrot cake. They're soft and chewy with classic carrot cake spices and shredded carrots.

Why does the dough have to be chilled?

Chilling cookie dough helps control the spread of the cookies as they bake. Chilling the dough results in taller, fluffier, chewier cookies.

How do you make perfectly round cookies?

Use a large cookie cutter or the open end of a large coffee mug and swirl it around the cookies 3 to 4 times while they're still hot. This shapes the cookies into a perfect circle.

Do I have to use gluten-free flour for these cookies?

Not at all. This recipe uses 1:1 gluten-free flour, which means it takes the place of regular flour in equal measure. Just replace it with regular flour.

    • Beat the cream cheese and butter for 1 to 2 minutes.
    • Slowly add the remaining ingredients and mix until smooth.
    • Place half of the cookies flat side up. Pipe frosting onto each cookie. Then, place the other cookies on top. Enjoy!

    Notes

Filling: Make sure your cookies are cooled completely before adding the cream cheese filling.
Butter: Be certain the ¼ cup melted butter is not steaming hot when mixing.
Cream Cheese: 4 ounces cream cheese should be room temperature before mixing otherwise it will be clumpy.
Carrots: Make sure the grated carrots are small enough therefore they bake properly.
Storage: Refrigerate these cookies for up to 4 days in an air-tight container.

The texture of the cookies was perfect, soft and chewy, with that cozy carrot cake spice that hits just right. And I loved how easy the steps were, and chilling the dough really made a difference in keeping them perfectly fluffy.
