This gluten-free Gluten Free Cheese Toast in Air Fryer will be the ultimate candidate for your next "cheese pull" video! This gorgeous beast of a sandwich has layers of ooey-gooey mozzarella cheese and chicken breast, and it's all tied together with a "secret sauce". Fun fact: all epic sandwiches have a "secret sauce", and this one is no different. The creamy and tangy sauce is made with gut-healthy fermented Italian dressing and heart-healthy avocado oil mayonnaise. What a winning flavor combination, right?!
The layered ingredients are then transformed into this monster of a sandwich through the magic of cooking it in an air fryer. Cooking this sandwich in the air fryer saves you the time and hassle of using a pan on the stovetop. Additionally, using an air fryer heats food more evenly. The application of even heat nonetheless gives this sandwich its particularly crispy exterior and gooey interior.

Ingredients

Sauce:
Sandwich:
- gluten free bread
- mozzarella cheese
- deli sliced chicken breast
- tomato
- oregano
- salt
- pepper
See recipe card for quantities.
Instructions
For the sauce:
- First, combine the sauce ingredients in a small bowl, then stir the ingredients to combine. Lastly, set the sauce aside and use in the next step.
For the sandwich:
- Then, begin layering the sandwich by putting sauce on one side of each piece of bread, first.
- Next, fold the deli chicken breast slice in half, then place two slices of the chicken breast on two of the bread slices. Place them directly on top of the sauce. Then, add 1 slice of mozzarella cheese to both of those slices of bread.
- Afterward, stack the meat and cheese-covered bread slices, and place the 3rd slice with just sauce on top of the sandwich. Then, add the remaining slice of mozzarella cheese to the top slice. Next, add sliced tomato and seasonings on top of the cheese. Place a toothpick through the center of the sandwich to prevent the top layer of bread from coming off in the air fryer.
- Next, oil the base of your air fryer, lightly, then add the sandwich directly to the middle of the base. Finally, cook the sandwich on the air fry setting at 370° F for 8-10 minutes, or until top cheese slice is melted and slightly crisp.

Substitutions
You can substitute the deli chicken breast slices for any sliced deli meat. Additionally, swap out the sliced mozzarella cheese for your favorite sliced cheese.
Additionally, put a few slices of turkey pepperoni on the sandwich and then sprinkle a bit of grated parmesan cheese for a pizza grilled cheese. If you're searching for a delicious vegetarian option, omit the deli chicken breast and then add a different type of cheese to the sandwich. Make sure to always add the secret sauce, it ties the entire sandwich together.
Equipment
Using an air fryer is optimal for yielding the best result out of this recipe. However, you certainly can make this sandwich in a conventional oven. If you're using a conventional oven, then set the oven temperature to 400°F. Next, place the sandwich on a baking sheet lined with parchment paper. Finally, bake the sandwich for 10-12 minutes, or until cheese is melted and slightly crisp.
Storage
Make sure to store any leftover cooked sandwiches in an airtight container in the fridge for up to 4 days.
