    Gluten-Free Oreo Cookies

    These Valentine gluten-free Oreo cookies are the perfect treat for Valentine's Day. Soft and chewy and full of Oreos, mini chocolate chips, and Valentine M&Ms, they're the perfect way to show all the special people in your life how much you care. The best part? They're so easy to tweak for any occasion!

    I love making all kinds of sweet treats for desserts or special occasions, and cookies are always heavily featured in my rotation. They're so easy to make, and they fit perfectly into any event. From Easter sugar cookies for a holiday gathering to coconut chocolate chip cookies or Oreo sandwich cookies for a weeknight dessert, cookies are always a great choice, in my opinion.

    With Valentine's Day coming up, I've added a new cookie recipe to the mix. My Valentine Oreo cookies are soft and chewy, and I've loaded them up with Oreo pieces, mini chocolate chips, and Valentine M&Ms for tons of flavor and the perfect Valentine's look!

    Now, the thing I really want to highlight here is that these cookies are great for ANY occasion because all you have to do is use regular M&Ms! That's what makes these delicious cookies so incredibly versatile and a must for any cookie lover.

    Ingredients

    • Gluten-Free Flour: I prefer King Arthur 1:1 gluten-free flour. I find it gives my cookies the best texture.
    • Cornstarch: Cornstarch makes the cookies softer and more tender.
    • Vanilla Extract: I prefer Singing Dog Vanilla extract for its quality, purity, and deep flavor.
    • Gluten-Free Oreos: Crushed Gluten-free Oreos add classic Oreo flavor to the cookies.
    • Mini Chocolate Chips: Mini chocolate chips add more chocolate flavor.
    • M&Ms: Valentine M&Ms add more chocolate flavor and a pop of Valentine's Day color.

    Flavor Variations

    • Dairy-Free: Use plant butter for gluten and dairy-free cookies.
    • Traditional Ingredients: You can use regular flour and Oreos if you don't have gluten issues.
    • M&Ms: Use regular or seasonal M&Ms to make cookies for any occasion.
    • Oreos: Change the flavor of the cookies by using different Oreos.

    Instructions

    1: Whisk the dry ingredients in a small bowl and set aside.

    2: Beat the butter and sugars in a stand mixer until creamy. Then, add the egg and vanilla and beat again until combined.

    3: Slowly mix the dry ingredients into the wet ingredients until just combined. Then, gently fold in the crushed Oreos, chocolate chips, and M&Ms with a rubber spatula.

    4: Use a 2-inch cookie scoop to place the cookie dough on a baking sheet lined with parchment paper, leaving enough room for the cookies to spread. Then, add additional M&Ms or crushed Oreos if you desire.

    5: Bake the cookies until the edges just begin to turn light brown. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

    Hint

    Be sure your butter is only room temperature and not warm. If your butter is warm, the cookies will become flat.

    Storage

    Store these cookies in an air-tight container for up to 10 days. For longer storage, freeze them in an air-tight, freezer-safe container or heavy-duty freezer bag with as much air removed as possible for up to 3 months.

    Bring the cookies to room temperature on the counter before serving.

    Pairing Suggestions

    Serve these cookies as a dessert or snack with a glass of milk for the kids or a cup of coffee or tea for the grownups.

    You can also serve them alongside other sweet Valentine's Day treats at parties and get-togethers. Recipes like Valentine's Day Sprinkle Cookies, chocolate strawberry cupcakes, and a strawberry vanilla Valentines margarita are all great options.

    Expert Tips

    • For perfectly rounded cookies, place a coffee mug over the top of the cookies as soon as you remove them from the oven and rotate around them in a swirling motion for about 5 seconds.
    • Make sure your butter is room temperature and not warm to prevent excess spread as the cookies bake.
    • I recommend using King Arthur 1:1 gluten-free baking flour for cookies with the best texture and no grainy feel.
    • Be sure to remove the cookies as soon as the edges turn golden while the centers are still slightly unbaked. Carryover baking time will finish them to perfection.

    FAQ

    Why didn't my gluten-free cookies spread?

    The amount of cornstarch or flour used is the usual culprit for hard cookies that don't spread. It's best to weigh your flour in grams if possible because a cup of flour can vary in weight by the manufacturer.
    For example, King Arthur 1:1 gluten-free flour weighs 120 grams per cup, while Bob's Red Mill 1:1 gluten-free flour weighs 150 grams per cup.

    How do you measure flour if you don't have a kitchen scale?

    To get the most accurate measurement without a scale, loosely spoon your flour into your measuring cup and level it off with a knife. Never scoop the flour out directly with the measuring cup. This compacts the flour, and you'll use too much.

    Can I make these Oreo chocolate chip M&M cookies dairy-free?

    Yes, you can! Simply use the same amount of dairy-free butter as regular butter in the recipe.

    Can I use regular flour in place of gluten-free flour for these cookies?

    Absolutely. I use a 1:1 gluten-free flour, so just replace it with the same amount of regular flour instead.

    Ingredients
      

    Dry Ingredients

    • 1 ⅓ cup King Arthur 1:1 gluten free flour
    • 1 tablespoon cornstarch
    • ½ teaspoon salt
    • ½ teaspoon baking soda

    Wet Ingredients

    • 1 stick butter softened
    • ½ cup brown sugar
    • ¼ cup sugar
    • 1 egg room temperature
    • 2 teaspoon Singing Dog vanilla

    Mix-Ins

    • 8 gluten free Oreos crushed
    • ¼ cup mini chocolate chips
    • 1 cup Valentine M&Ms

    Instructions
     

    • Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
    • Whisk the flour, cornstarch, salt, and baking soda in a small bowl and set aside.
    • Beat the butter, brown sugar, and sugar in a mixer on medium for 90 seconds until creamy.
    • Add the egg and vanilla and mix again for 20 seconds until just combined.
    • Slowly mix the dry ingredients into the wet ingredients on low until just combined.
    • Gently fold in the crushed Oreos, chocolate chips, and M&Ms with a rubber spatula.
    • Using a 2-inch cookie scoop, place the dough on the prepared baking sheet, leaving room for the cookies to spread.
    • Bake the cookies for 10 to 11 minutes until the edges just begin to turn light brown and the centers are still a bit underdone.
    • Cool the cookies on the baking sheet for 5 minutes. Then, transfer them to a wire rack to cool completely.

    • For longer storage, freeze the cookies for up to 3 months in an airtight, freezer-safe container or heavy-duty freezer bag. 
    • Bring the cookies to room temperature before serving. 
    Tips
    • Your butter should be room temperature, not warm.
    • Bring all your cold ingredients to room temperature. This makes them easier to mix, preventing overmixing. 
    • Mix your cookie dough ingredients until combined but no further. Overworking the dough will make the cookies tough and dense.

      I'm always wary of gluten free cookies, but these came out so perfect! Soft, with crunchy M&Ms and the addictive oreo pieces. Brought them for a friend who has celiac, but had to keep some for myself, they were just so good.
