    This Marry Me chicken puff pastry recipe is a hand-held feast everyone will love. Golden, flaky, gluten-free puff pastry pockets are filled with a buttery chicken and vegetable filling loaded with classic Italian seasonings and a hefty helping of mozzarella cheese. YUM!

    I love working with puff pastry. Its buttery flavor and golden, flaky texture work with so many flavors. Of course, it's perfect for sweet treats like this puff pastry Nutella Christmas tree, but it also works with all kinds of savory flavors.

    I combined the classic flavors of my Marry Me Chicken pasta with the wonderful flavor and texture of puff pastry to create chicken puff pastry turnovers that will have everyone coming back for more!

    • Easy to Make: It only takes a few minutes of stovetop cooking, a little filling, and about 10 minutes in the oven to make these turnovers.
    • Classic Flavor: The sun-dried tomatoes, veggies, chicken, and seasonings fill every bite with classic Marry Me flavor.
    • Perfect for Everyone: These are already gluten-free, but you can make two simple tweaks to create a gluten and dairy-free version.

    Ingredients

    • Puff Pastry: I used gluten-free Sweet Loren's Puff Pastry. I really enjoy its butter flavor and flakiness.
    • Grilled Chicken Breast Strips: I prefer Springer Mountain Farms fully cooked grilled chicken breast strips. Their chickens are raised without antibiotics or hormones and are fed a diet with NO animal by-products.
    • Vegetables: A mix of onions, spinach, mushrooms, and sun-dried tomatoes gives the filling an aromatic, earthy flavor with a touch of sweetness.
    • Seasonings: A blend of paprika, Italian seasoning, and basil gives the filling a classic Italian flavor.
    • Sun-Dried Tomato Oil and Butter: The tomato oil and butter make a flavorful base for cooking the vegetables and chicken and add richness to the filling.
    • Chicken Broth: Chicken broth gives the filling the perfect amount of moisture while adding even more flavor.
    • Mozzarella Cheese: Mozzarella cheese gives the filling a nice cheesiness.

    Flavor Variations

    • Puff Pastry: I used gluten-free puff pastry, but you can use traditional puff pastry if you have no gluten issues.
    • Chicken: The seasonings in this filling would work well with ground beef or Italian sausage, as well.
    • Turkey Puff Pastry: Use leftover rosemary turkey for an extra-flavorful turkey version.
    • Hand-Held Pot Pie: Use a thickened version of my chicken or turkey puff pastry pot pie filling for handheld pot pies!
    • Dairy-Free: Use vegan mozzarella cheese and plant butter for a dairy-free version.
    • More Vegetables: Add diced bell peppers, garlic, carrots, celery, or any of your other favorite vegetables for more flavor.
    • Mozzarella Cheese: Any gooey, melty cheese will work well in this recipe.

    How to Make This Chicken Puff Pastry Recipe

    1: Add the chicken to a food processor and blend until very fine. Then, place it in a bowl.

    2: Heat the sun-dried tomato oil and butter in a large skillet over medium heat. Then, cook the vegetables and tomato paste in the mixture until fragrant.

    3: Add the chicken broth and cook until the spinach begins to wilt. Then, add the diced chicken and cook on low for a few minutes so the chicken can absorb the flavors.

    4: Cut the puff pastry into the shape of your choice. I made triangles.

    5: Place 1 tablespoon of filling onto the puff pastry and spread it out evenly. Then, top it with a little mozzarella cheese and fold the pastry dough over the filling.

    6: Press the edges of the pastry together with a fork and brush them with egg wash.

    7: Place the pastries about 1 inch apart on a baking sheet lined with parchment paper. Then, bake them at 420 for about 10 minutes or until golden.

    Hint

    Be sure not to overfill your pastries. Adding too much filling will cause oozing.

    Storage

    Refrigerate these chicken puff pastries for up to 3 days in an air-tight container.

    To reheat the pastries, microwave them at 30-second intervals until heated through.

    What to Serve with This Puff Pastry with Chicken

    These chicken-filled puff pastries are a full meal on their own, but I usually serve them with sides for a larger meal. Mashed potatoes are a classic flavor pairing, and simple vegetable recipes like this squash and zucchini medley also work very well.

    For dessert, continue the hand-held theme with sweet treats like chocolate coffee cookie sandwiches, pretzel chocolate chip cookies, or Reese's Pieces peanut butter cookies.

    Tips for the Best Marry Me Chicken Puff Pastry

    • Chop your chicken until it's very fine. The filling is kind of like a chicken salad.
    • Don't overfill your puff pastries, or the filling will ooze out as they bake.
    • Give your pastries about an inch of space between each one so every part of the pastry can brown as it puffs up.
    • Keep an eye on your pastries. Cooking times can vary from oven to oven and pastry brands.

    How do you keep pastries from opening while they bake?

    Wet the edges of the puff pastry slightly with a bit of water and crimp them with a fork to ensure they're fully sealed. Also, be careful not to overfill your puff pastry, as that can cause them to open as they bake.

    • 2 sheets puff pastry dough
    • 8 oz grilled chicken breast strips
    • ¼ cup sun-dried tomatoes diced
    • ⅓ cup spinach diced
    • ¼ cup mushrooms diced
    • 1 tablespoon sun-dried tomato oil
    • 2 teaspoon sweet smoked paprika
    • 2 teaspoon Italian seasoning
    • ¼ teaspoon dry basil
    • ¼ teaspoon salt
    • ⅛ teaspoon black pepper
    • 2 tablespoon butter
    • ½ tbsp minced onion
    • ¼ cup chicken broth
    • 1 tablespoon tomato paste
    • 1 egg beaten
    • mozzarella cheese

    Instructions
     

    • Preheat the oven to 420 degrees and line a baking sheet with parchment paper.
    • Add the chicken to a food processor and blend until very fine. Then, place it in a bowl.
    • Heat the sun-dried tomato oil and butter in a large skillet over medium heat. Then, saute the minced onion, sun-dried tomatoes, mushrooms, spinach, and tomato paste for 2 minutes until fragrant.
    • Add the chicken broth, stir well, and continue cooking until the spinach begins to wilt.
    • Add the chicken and mix well. Cook on low for 3 to 4 minutes so the chicken can absorb the flavors.
    • Cut the puff pastry sheets into the shape of your choice. I made triangles.
    • Place 1 tablespoon of the chicken mixture on the pastry and spread it out evenly. Then, add a small amount of mozzarella.
    • Fold the pastry dough over the filling and press the sides down with a fork.
    • Place the pastries about 1 inch apart on the prepared baking sheet and brush them with the egg wash. Bake for 10 minutes or until golden.

      This is utterly delicious! I love that you used grilled chicken breast strips instead of mince (which I can't stand the texture of) and added lots of veggies for the flavor. The amount of umami in this is incredible and so quick to make too. This will go on my rotation for sure!
