    Reese's Pieces peanut butter cookies are exactly what their name says. These soft, chewy, gluten-free cookies are loaded with creamy peanut butter, Reese's Pieces, and chocolate chips.

    When it comes to holiday treats, nothing beats cookies. They're so easy to make, and you can make all kinds of variations with just a few tweaks and some mix-ins. I love making Easter cookies with pastel colors or Christmas cookies decorated to look like postcards.

    One of my favorite cookie recipes is this peanut butter variation filled with Reese's Pieces and chocolate chips. These cookies are rich and sweet, and they're perfect for everything from weeknight dessert to holiday gatherings.

    Ingredients

    • Gluten-Free 1:1 Flour: I prefer Bob's Red Mill 1:1 gluten-free flour. I find it gives baked goods the best texture possible.
    • Unsalted Butter - Melted and Cooled: Melted butter gives the cookies the fat they need to bake up soft and chewy.
    • Brown and White Sugar: This blend of sugars gives the dough its sweet flavor and helps the cookies caramelize just a bit as they bake.
    • Vanilla Extract: I prefer Singing Dog vanilla for its quality, purity, and deep vanilla flavor.
    • Natural Creamy Peanut Butter: Creamy peanut butter gives the dough a lovely peanut butter flavor.
    • Reese's Pieces and Chocolate Chips: A combination of Reese's Pieces and gluten-free chocolate chips gives every bite a big kick of chocolate and peanut butter flavor.

    Flavor Variations

    • Chocolate Chips: You can use milk, semi-sweet, or dark chocolate chips for these cookies.
    • Reese's Pieces: Try chopping up mini Reese's Cups in place of the Reese's Pieces for a fun twist.
    • Peanuts: Add roasted peanuts to the dough for more texture and deeper peanut flavor.

    How to Make Peanut Butter Reese's Pieces Cookies

    1: Preheat the oven to 350 degrees and line 2 to 3 baking trays with parchment paper.

    2: Combine the flour, baking soda, and salt in a medium bowl and whisk well.

    3: Beat the melted butter, brown sugar, and granulated sugar on medium speed in a large mixing bowl until combined. Then, add the egg, vanilla, and peanut butter and mix with a spatula until combined.

    4: Add the dry ingredients to the wet ingredients and mix until combined, being careful not to overmix.

    5: Lastly, stir the chocolate chips and Reese's Pieces into the dough.

    6: Using a 2-inch cookie scoop, scoop out dough rounds and place them about 2 inches apart on the lined cookie trays.

    7: Bake the cookies for 10 to 11 minutes until the edges are slightly browned and the center is still soft.

    8: Let the cookies cool on the baking sheet for 5 to 10 minutes, then transfer them to a wire cooling rack to cool completely. Enjoy!

    Hint

    It's important to remove the cookies as soon as the edges are browned. The secret to making these cookies so soft and chewy is letting carryover baking time from the hot cookie sheet finish baking the cookies as they cool.

    Storage

    Store these cookies at room temperature for up to 5 days in an air-tight container. For longer storage, you can freeze them for up to 3 months in an air-tight, freezer-safe container. Just place the cookies in the container in single layers separated by parchment paper and pop them in the freezer.

    Defrost the cookies on the counter before serving, and enjoy!

    What to Serve with Reese's Pieces Cookies

    Like all cookies, these Reese's Pieces peanut butter cookies are delicious with a glass of milk or a cup of coffee or tea.

    They make a tasty dessert after a meal of bacon gnocchi with chicken, air fryer pork chops with your favorite veggies, or chicken bacon mushroom pasta.

    You can also serve them alongside other sweet treats as part of a larger dessert spread at parties. Their peanut butter flavor is perfect with desserts like chocolate banana cake, Christmas white chocolate Oreos, or oatmeal cream pies.

    Tips for the Best Reese Pieces Peanut Butter Cookies

    • Mix your cookie dough until just combined. Although these cookies are gluten-free, overmixing can still make them dense.
    • Remove the cookies AS SOON as their edges are browned. Carryover cooking time from the heat of the cookie sheet will finish baking them to soft, chewy perfection.
    • Be sure you cool your butter after melting it. You want it to be liquefied for these cookies, not hot.
    • If your peanut butter has separated, mix it well to ensure it's nice and creamy before adding it to the cookie dough.

    Ingredients
      

    • 1 ¼ cups gluten free flour
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • ½ cup unsalted butter melted and cooled
    • ½ cup packed light brown sugar
    • ½ cup granulated sugar
    • ¼ cup natural creamy peanut butter
    • 1 large egg room temperature
    • 1 teaspoon Singing Dog vanilla extract
    • ¾ cup chocolate chips
    • ¾ cup Reese's Pieces

    Instructions
     

    • Preheat the oven to 350 degrees and line 2 to 3 baking sheets with parchment paper.
    • Whisk the flour, baking soda, and salt in a medium bowl.
    • Mix the melted butter, brown sugar, and granulated sugar in a large mixing bowl on medium until combined - about 30 seconds.
    • Add the egg, vanilla, and peanut butter and mix again with a rubber spatula until combined.
    • Add the dry ingredients to the wet ingredients and mix until combined, being careful not to overmix.
    • Fold the chocolate chips and Reese's Pieces into the dough until combined.
    • Using a 2-inch cookie scoop, scoop out balls of dough and place them about 2 inches apart on the lined cookie sheets.
    • Bake the cookies for 10 to 11 minutes until the edges are slightly brown and the centers are still undone.
    • Cool the cookies for 5 to 10 minutes on the baking sheet, then transfer them to a wire rack to cool completely.

    • Freeze for up to 3 months in an airtight, freezer-safe container. The cookies should be in single layers separated by parchment paper. 
    • Bring the cookies to room temperature before serving. 
    Tips
    • Mix the dough until combined and no further. Overmixing it makes the cookies tough. 
    • The cookies should be removed as soon as the edges are browned. It's okay and to be expected that the centers will still be underdone. The heat from the pan will finish them off. 
    • Always fold your mix-ins into your dough. Never mix them. This ensures your cookies stay nice and soft.

      I made these for a little party I had with some neighbors and their kids. This was great because there were some gluten allergies PLUS I had so much leftover Halloween candy so I chopped up candy bars for the chocolate chips. They were all gone by the end of the night!
