    If you love the flavors of fall, this cinnamon roll bundt cake is for you. A moist, tender, gluten-free cake is infused with the classic flavors of cinnamon rolls, thanks to a cinnamon sugar mixture swirled into the batter and a cream cheese glaze to complete the flavor profile.

    Bundt cake recipes are always at the top of my list when I'm making fall desserts. Their old-school shape and sweet flavors are just so classic for the season. Of course, cinnamon rolls are great any time of year, but I'm an especially big fan of them during the fall and winter. I decided to get crazy and combine the two into one sweet treat, and the results are absolutely amazing if I do say so myself.

    Ingredients for the Cinnamon Roll Bundt Cake

    • Gluten Free Flour: I prefer Bob's Red Mill 1:1 gluten free baking flour. It gives cakes the best texture and flavor.
    • Olive Oil: Costabile olive oil adds the moisture and fat necessary to make this cake moist and tender.
    • Butter Olive Oil: Costabile butter olive oil adds moisture and fat along with a buttery flavor.
    • Vanilla Extract: I use Singing Dog vanilla extract for its deep, rich flavor, quality, and purity.

    What you will need for the Cinnamon Mixture

    • Cinnamon Stick Honey Cream Spread: Bumbleberry Farms Cinnamon Stick Honey Cream Spread gives the cinnamon sugar mixture a wonderful honey flavor that works perfectly with the cake.
    • Cinnamon and Brown Sugar: This is the classic mixture you'll find in all your favorite cinnamon rolls.

    For the Glaze

    • Cream Cheese Extract: I use OliveNation cream cheese extract. It gives the glaze classic cinnamon roll frosting flavor without weighing down the glaze. Use Code: 15GoldenGK for 15% off.
    • Powdered Sugar: Powdered sugar adds sweetness and just the right amount of thickness to the glaze.

    Flavor Variations

    • Gluten Free Flour: If you don't have gluten restrictions, feel free to use regular flour in equal amounts.
    • Diced Apple: Try mixing diced apples into the batter for apple cinnamon roll bundt cake.
    • Berries: Add your favorite berries for a berry cinnamon roll variation.
    • Cream Cheese Glaze: For a sweeter, heartier topping, use cream cheese frosting. Simply add the frosting while the cake is warm or hot to create a thick, glaze-like frosting effect.
    • Butter Olive Oil: If you don't have butter olive oil, simply use a full cup of olive oil in place of the butter oil and olive oil combo.
    • Bumbleberry Spread: If you don't have this spread, mix ¼ cup of melted butter, ¼ cup brown sugar, ½ tablespoon gluten free flour, and 2 teaspoon cinnamon together to get ta close approximation.

    How to Make Cinnamon Roll Bundt Cake

    Baking the Cake

    1: Whisk the dry ingredients together in a small bowl and set it aside.

    2: Mix the sugar and eggs until light. Slowly add the olive oil to your egg mixture while mixing slowly. Then, add the vanilla and mix again.

    3: Add half the dry ingredients to the wet ingredients and mix on medium speed until just combined. Then, scrape down the bowl, add the remaining dry ingredients, and mix again until it's just combined.

    4: Make the cinnamon mixture by warming up the cinnamon spread for about 10 seconds in the microwave. Then, combine it with the remaining ingredients in a small bowl.

    5: Pour the batter into a lightly greased bundt pan (be sure to get all the nooks and crannies). Then, gently add the cinnamon mixture evenly along the top of the batter.

    6: Swirl the cinnamon mixture gently into the top of the batter. Just swirl it into the top. It will sink further in as the cake bakes.

    7: Bake the cake until a toothpick inserted into the center comes out clean. Then, place it on a cooling rack to cool for about 10 minutes. Place the cooling rack over the top of the pan, invert the cake, and carefully remove it.

    To Make the Cream Cheese Glaze

    1: Whisk the glaze ingredients together in a small bowl, adding milk until you reach your desired consistency. Then, pour it over the cooled cake and let it set. Enjoy!

    Hint

    Mix your cake batter until just combined. Although this is a gluten free recipe, overmixing can still make the cake dense and tough.

    Storage

    Store this cake at room temperature in an air-tight container for up to 5 days. The glaze uses cream cheese extract, so there's no need to refrigerate it.

    Tips for the Best Bundt Cake

    • Mix your wet and dry ingredients separately, then mix them until just combined.
    • Whisk your egg mixture continuously as you add the oil, so the mixture emulsifiers.
    • Be sure to coat every nook and cranny of your bundt cake pan with your preferred oil or nonstick spray to ensure the cake doesn't fall apart when you remove it.
    • If your cake doesn't immediately release, give it several forceful taps with your hand all around the sides and the top to help loosen it.
    • Bring all your cold cake ingredients to room temperature. This allows them to mix more easily, avoiding overmixing.

    Invert the bundt cake pan over a wire cooling rack while the cake is still warm. Then, give it several firm taps with the palm of your hand all around the outside and top of the pan. This helps the cake release from the pan's interior.

    Ingredients
      

    For the Cake

    • 2 cups Bob's Red Mill 1:1 gluten free flour
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • ¾ cup olive oil
    • ¼ cup butter olive oil
    • 5 eggs room temperature
    • 1 ¼ cups sugar
    • 2 teaspoon Singing Dog vanilla

    For the Cinnamon Mixture

    • 4 oz Bumbleberry Farms Cinnamon Stick Honey Cream Spread
    • ¼ cup brown sugar
    • 1 teaspoon cinnamon
    • ½ teaspoon Bob's Red Mill 1:1 gluten free flour

    For the Glaze

    • 1 cup powdered sugar
    • 1 ½ teaspoon cream cheese extract
    • 5 teaspoon milk

    Instructions
     

    For the Cake

    • First, lightly grease your bundt pan and set it aside. Preheat the oven to 340 degrees.
    • Then, whisk the flour, baking powder, and salt in a small bowl.
    • Next, in a stand mixer, mix the sugar and eggs for 3 minutes until they're light. Then, slowly add the olive oil while continuing to mix. Add the vanilla extract and mix again.
    • Then add half of the flour mixture and mix on medium speed until just combined. Then, scrape down the bowl and mix in the other half of the dry ingredients until just combined.
    • Next, pour the batter evenly into the bundt pan.
    • Warm the cinnamon spread in the microwave for 10 seconds. Then, combine it with the cinnamon, flour, and brown sugar and mix well.
    • Spoon the cinnamon mixture evenly across the top of the batter. Then, gently swirl it into the top of the batter, being careful not to mix it too deeply. The mixture will sink a bit as it bakes.
    • Bake the cake for 45 to 55 minutes until a toothpick inserted into the center comes out clean.
    • Lastly, place the bundt pan on a cooling rack and cool for 10 minutes. Then, place the cooling rack on top of the bundt pan, invert it, and turn out the cake. Cool until the cake is just warm before adding the glaze.

    For the Glaze

    • Whisk the powdered sugar, cream cheese extract, and milk in a small bowl until it reaches your desired consistency.
    • Pour the glaze over the cooled cake and let it set.
