These Chicken Parmesan Mummy Garlic Bread slices are cheesy, saucy, and just spooky enough for Halloween. Gluten-free Texas toast gets topped with shredded rotisserie chicken and marinara, wrapped up in mozzarella "bandages," and finished with googly eyes. They're ready in about 25 minutes and come out tasting just like chicken parm.

Halloween is the one time of year I let my food get a little silly. I always keep a box of gluten-free Texas toast in the freezer for my Texas Toast Meatball Melts, so turning a few slices into mummies felt like the natural next step. I added shredded rotisserie chicken and a spoonful of marinara for that classic chicken parmesan flavor, then wrapped everything up in strips of mozzarella. They're the perfect savory bite to balance out all the sweets at your Halloween party, like my Spider Web Brownies and Gluten-Free Halloween Candy Cake.

    Key Ingredients

See the recipe card at the end of the post for a full list of ingredients and their exact amounts.

Ingredients for chicken parmesan mummy garlic bread
    • Gluten-Free Texas Toast: I use The New York Bakery Gluten Free Texas Toast. It's made with real garlic, so it bakes up like garlic bread with zero extra work. One box has 6 slices.
    • Shredded Rotisserie Chicken: I used shredded rotisserie chicken from Aldi. Any cooked, shredded chicken works, so this is a great way to use up leftovers from my Air Fryer Rotisserie Chicken or Oven-Baked Whole Chicken with Veggies.
    • Mozzarella Cheese Sticks: String cheese pulls apart into long strips that look just like mummy wrappings. You'll need 4-5 sticks.
    • Marinara Sauce: A good jarred marinara does all the work here. Double-check the label to make sure it's gluten-free.
    • Googly Eyes: I use Halloween candy googly eye sprinkles. If you don't have any, black olive slices work too.

    Flavor Variations

    • Make it spicy with a pinch of red pepper flakes in the marinara.
    • Swap the chicken for pepperoni or browned Italian sausage, or use meatballs like my Texas Toast Meatball Melts.
    • Sprinkle a little grated parmesan and Italian seasoning on top before the final bake for an even more classic chicken parm flavor.
    • No googly eyes? Black olive slices make great mummy eyes.

HOW TO Make Chicken Parmesan Mummy Garlic Bread

Gluten-free Texas toast slices with a small well pressed into the center of each

Step 1. Preheat your oven to 375°F and lightly grease a baking sheet. Place the 6 slices of Texas toast on the sheet without letting them touch, then bake for 7 minutes to soften. While they bake, cut the mozzarella sticks in half and pull them into strips about ¼ inch wide, shredding one stick into very small pieces for the bottom layer. Remove the toast from the oven and use the back of a spoon to press a small well into the center of each slice.

Shredded rotisserie chicken added to the wells of the Texas toast

Step 2. Next, place a few small shreds of cheese into each well, then add about 1 tablespoon of shredded rotisserie chicken.

Marinara sauce spooned over the chicken on each slice of Texas toast

Step 3. Then, spoon about 2 tablespoons of marinara over the chicken on each slice.

Mozzarella cheese strips crossed over Texas toast to look like mummy wrappings

Step 4. After that, layer 2 of the larger cheese strips in an "X" across the bottom of each toast, then again across the top, so it looks like mummy wrappings.

Step 5. Bake at 400°F for 5-8 minutes, until the cheese has melted. Once they come out of the oven, add two googly eyes near the top of each mummy and serve warm.

    Nicole's EXPERT Tips

    • Don't let the slices touch on the baking sheet. A little space helps the edges crisp up.
    • Press the wells gently! A shallow pocket holds the chicken and sauce without tearing the bread.
    • Leave small gaps between the cheese strips so the marinara peeks through. That's what makes them look like mummies.
    • Keep an eye on the final bake. Because ovens vary, pull them out as soon as the cheese has melted.
    • Make it a full Halloween spread with Spider Web Brownies and Gluten-Free Halloween Candy Cake for dessert.

Chicken Parmesan Mummy Garlic Bread FAQ

    Is this recipe gluten-free?

Yes! I use The New York Bakery Gluten Free Texas Toast. Just double-check that your marinara sauce and googly eye sprinkles are labeled gluten-free, since brands vary.

Can I make these in the air fryer?

Yes! Air fry the Texas toast at 350°F for 3-4 minutes to soften, then make the wells and add the toppings. Air fry for another 3-4 minutes, until the cheese has melted, then add the googly eyes. Work in batches so the slices don't touch.

What can I use instead of googly eyes?

Black olive slices make great mummy eyes, or you can skip the eyes altogether.

Can I use a different kind of chicken?

Absolutely. Any cooked, shredded chicken works, including leftover baked chicken, grilled chicken, or canned chicken that has been drained well.

Can I make these ahead of time?

You can shred the chicken and pull the cheese into strips ahead of time and keep them in the fridge. For the best texture, assemble and bake the mummies right before serving so the toast stays crisp.

    • 4-5 mozzarella cheese sticks
    • 1 cup marinara sauce gluten-free
    • ¾ cup shredded chicken I used shredded rotisserie chicken from Aldi
    • 12 Halloween googly eye sprinkles or black olive slices

    Instructions

    • Preheat the oven to 375°F. Lightly grease a baking sheet.
    • Place the 6 slices of Texas toast on the baking sheet without letting them touch. Bake for 7 minutes to soften.

    Notes

Storage: Let the mummies cool completely, then store in an airtight container in the refrigerator for up to 3 days.
Reheating: Warm in a 350°F oven for 5-8 minutes, or until heated through, to help keep the toast crisp. Microwaving works in a pinch, but the bread will be softer.
