1: Preheat the oven to 350 degrees and line an 8x8 baking pan with parchment paper.
2: Lightly beat the egg in a small bowl.
3: Combine the eggs, oats, and all remaining ingredients except the apples in a large bowl, mixing well with a rubber spatula. Add the diced apples and mix again. The mixture will be slightly wet.
4: Pour the oat mixture into the prepared pan and decorate with finely sliced apples. Bake for 30 to 35 minutes until the top is golden brown and the mixture is no longer wet.
5: Cool for a few minutes, slice, and enjoy!

- Make your parchment paper long enough to leave overhang so you can easily remove the baked oats when they're done.
- It's important to mix everything with a spatula to achieve the best texture.
- Always mix the apples in last. This ensures that all the other ingredients can properly mix without adhering to the apple chunks.
- Your oat mixture will look wet before baking. That's good! If it doesn't look wet, it's too dry.
- Let your baked oats cool for a few minutes so they can fully set. This allows them to hold their shape when sliced.
Storage
Refrigerate these baked apple cinnamon oats for up to 5 days in an air-tight container. For longer storage, wrap slices individually in plastic wrap and freeze for up to 2 months in an air-tight, freezer-safe container. Defrost overnight in the refrigerator before reheating.
