This prosciutto waffle air fryer sandwich is such a fun and delicious twist to your morning breakfast. Fluffy waffles loaded with provolone cheese, prosciutto, and eggs are like breakfast heaven! These breakfast sandwiches are so easy to make, come together in just five minutes in the air fryer, and can be frozen for meal prep.
Keeping the freezer stocked with homemade breakfast sandwiches is such a great way to stay ahead of your meal prep. Our mornings begin so early, sometimes there just isn’t enough time to make breakfast. That’s when having a waffle sandwich to pull out of the freezer just makes perfect sense.
This isn’t like just any air fryer prosciutto breakfast sandwich, the combination of provolone cheese and prosciutto gives such a nice twist to your classic egg sandwich.
Ingredients
Waffles: we are using homemade gluten-free waffles slightly sweetened with Singing Dog Vanilla extract for this recipe.
Eggs: this recipe calls for two eggs, keeping our protein intake high. If you can not have eggs, that’s ok, simply omit the egg and use something in its place like chicken breast.
Provolone cheese: I like the combination of provolone and prosciutto, however, you can use any cheese you would like.
Prosciutto: prosciutto is definitely a healthier option than bacon. It is lower in calories and fat than bacon, in moderation it makes for a flavorful ingredient option.
Instructions
- First, Make your waffles, or if you have meal prepped your waffles ahead of time, just be certain to have them come to room temperature.
- Then, cook eggs to your liking.
Assemble your sandwich:
- Place one waffle on a plate.
- Then, add one slice of cheese and one egg.
- Next, fold the prosciutto in half. Place all 3 slices on top of the cheese.
- Then, add your second egg and your last slice of cheese.
- Last, place the second waffle on top of the sandwich.
- Be certain to follow this up with a toothpick through the center of the sandwich to keep the top layer from blowing off in the air fryer.
- Air fry at 360 °F for 5-6 minutes. Maple syrup is optional! Enjoy!
Storage
To store a Prosciutto and Provolone waffle breakfast sandwich, you should first allow it to cool to room temperature. Then, wrap the sandwich tightly in plastic wrap or aluminum foil, making sure to seal it completely. Place the wrapped sandwich in an airtight container or a resealable plastic bag, and then store it in the refrigerator. The sandwich can be stored in the refrigerator for up to 3 days.

Air fryer: Can be used to "grill" the sandwich quickly and with minimal oil, making this recipe a healthier choice.
Top Tip
Freezer waffle breakfast sandwiches are great for meal prep. They tend to heat very well in the microwave. Placed a moist paper towel around your sandwich and give it a quick warm-up in the microwave.
FAQ
Can you freeze prosciutto sandwich?
To freeze the breakfast sandwiches: make the breakfast sandwiches as instructed in the recipe below, then wrap the sandwiches in plastic wrap, followed by aluminum foil. I recommend wrapping them individually. In order to reheat the sandwiches, remove them from the foil and plastic wrap and heat them in the microwave or oven. If you choose to reheat these in the air fryer, I recommend allowing them to come close to room temperature first.
Can you eat prosciutto while pregnant?
Make sure that the prosciutto you are eating is from a reputable source and has been stored and handled properly to avoid the risk of contamination with harmful bacteria. This bacteria can cause an infection called listeriosis, which can be dangerous for pregnant women and their unborn babies.
Can you eat prosciutto raw?
Yes, prosciutto is a type of cured ham that is traditionally eaten raw, sliced thinly, and served at room temperature.
Any provolone substitute?
Mozzarella: Mozzarella cheese is a good substitute for provolone, as it has a similar mild flavor and creamy texture. It melts well and is often used in pizzas and sandwiches.
Gouda: Gouda cheese has a slightly nutty flavor and a creamy texture, and it can be a good substitute for provolone in sandwiches or melted on top of burgers.
