Ingredients
- Boneless Boston Butt Roast: A Boston butt has the perfect amount of fat to produce a rich, tender, juicy roast that falls apart with a fork.
- Rub: A blend of paprika, oregano, adobo, garlic powder, and black pepper gives the pork big, bold flavor in every bite.
- Olive Oil: Olive oil helps the spices cling to the roast.
- Minced Garlic: Minced garlic adds deep flavor with a bit of bite and sweetness.
- Orange and Garlic Olive Oil: orange olive oil and garlic olive oil help brown the roast as it cooks while giving it more flavor with a hint of citrus. I prefer Costabile olive oil for its quality and purity. Use Code: 15GoldenGK for 15% off.
See the recipe card at the end of the post for a full list of ingredients and their exact amounts.
Flavor Variations
- Oil: You can use regular olive oil in place of the infused olive oil in equal amounts.
- Beef: Use a chuck roast to make pulled beef.
- Chicken: Boneless skinless chicken breasts or thighs can be used to make chicken adobo. Adjust your cooking time accordingly, however.
- Spicy: Add cayenne or red pepper flakes to the rub for a spicy kick.
How to Make This Recipe for Pork Adobo
1: Combine the dry seasonings and olive oil in a small bowl. Then, using gloves, coat the entire roast. You can cook it immediately or marinate it overnight.

2: Place the pork in a slow cooker and pour the chicken broth around the sides. Then, top it with the oils and minced garlic.

3: Cook the roast on low until it falls apart with a fork.

Hint
You'll get the most flavor and the tenderest meat if you let the roast marinate overnight.
Storage
Refrigerate this pork adobo for up to 3 days in an airtight container. For longer storage, freeze it for up to 3 months in an airtight, freezer-safe container.
To reheat the meat, defrost it overnight in the refrigerator. Then, microwave individual portions at 1-minute intervals until heated through.
What to Serve with This Filipino Pork Adobo Recipe
Use this for pulled pork sandwiches, tacos, or burritos. It's also delicious paired with rice or mashed potatoes and a veggie side like pan-fried squash and zucchini.
Tips for the Best Pork Adobo Recipe
- Thoroughly coat your roast in the dry rub to ensure maximum flavor.
- It's better to let the roast marinate overnight if possible.
- While you can cook this roast on high for faster results, it's most tender if you cook it on low.
- Choose a Boston butt with plenty of marbling and connective tissue. That's what breaks down into collagen as it cooks and creates super-tender and juicy meat.
