    If you think of a dry, flavorless, boring patty when you think of chicken or turkey burgers, then I'm so glad you're here. I'm about to change the way you think about a healthy chicken burger recipe forever!

    I know, I know. Everyone says chicken and turkey burgers are awful, and frankly, when you make them the way most people do, they're right. The key to getting a flavorful, juicy grilled chicken burger is all about the ingredients.

    Take these air fryer turkey burgers, for example. They're moist and flavorful because I gave them what they needed, rather than just forming them into a patty. That's what I've done with these grilled chicken burgers.

    By adding moisture, plenty of seasonings, and a good binder, I created a tasty, juicy burger that's anything but bland. Once you take a bite of this burger, I know you'll be a convert!

    I used Springer Mountain Farms ground white meat chicken for this recipe. They never add hormones or antibiotics, and they feed their chickens a diet free of any animal by-products.

    Variations

    • Proteins: You can use ground chicken, turkey, beef, pork, or a beef and pork blend. They all work with the seasoning in this recipe.
    • BBQ Burgers: Replace the olive oil with BBQ sauce for a BBQ version.
    • Spicy: Add red pepper flakes or cayenne to the seasoning blend for spicy burgers.
    • Smoked: Add wood chips for a smoky version of these chicken burgers.

    How to Make Grilled Chicken Burgers

    Step 1: Using your hands, mix the burger ingredients until combined.

    Step 3: Grill on high heat (375°F to 400°F) until the burgers reach an internal temperature of 165°F.

    Expert Tips

    • Mixing your burgers by hand ensures you don't overwork them. I like to use these Nitrile gloves to keep my hands clean and prevent cross-contamination.
    • Mix your ingredients until everything is well combined, but be careful not to overmix. Overworking the meat causes the proteins to contract as they cook, squeezing out the juice and resulting in dry burgers.
    • Brush your grill grate with olive oil to prevent sticking while the burgers cook.
    • Your burgers will release some juice as they cook. That's okay and completely unavoidable.
    • Grill the burgers with the lid closed. This retains the heat and keeps the burgers juicy.

    Should you grill chicken burgers with the lid open or closed?

    Because ground chicken is so lean, chicken burgers should be grilled with the lid closed. This ensures even heat, traps moisture, and prevents dry burgers.

    Ingredients
      

    • 1 lb ground chicken
    • 2 tablespoon spinach finely diced
    • 1 ½ teaspoon smoked paprika
    • 1 teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon thyme
    • ¾ teaspoon salt
    • ¼ teaspoon black pepper
    • ½ egg
    • ¼ cup panko
    • 1 teaspoon olive oil

    Instructions
     

    • Rub the grill grate with olive oil and preheat the grill to between 375 and 400.
    • Mix the dry seasonings in a small bowl.
    • Using your hands, mix the chicken, seasonings, egg, panko, and spinach in a large bowl.
    • Divide the chicken into four patties, making a small dent in the center of each.
    • Brush the burgers with olive oil, place them on the grill, and cook for 4 to 5 minutes with the grill closed. Then, flip the burgers and grill for another 4 to 5 minutes until their internal temperature reaches 165 degrees.

    Storage
    • Refrigerate for up to 3 days in an airtight container. 
    • Wrap individual burgers in plastic wrap and freeze for up to 3 months in an airtight, freezer-safe container or heavy-duty freezer bag. 
    • Defrost overnight if frozen. Then, microwave the bugers at 1-minute intervals until heated through. 
    Tips
