    This Marry Me chicken dip takes all the flavor and texture of classic Marry Me chicken and transforms it into a dip. Seasoned shredded chicken, sun dried tomatoes and spinach are combined with a rich tomato cream sauce and baked until ooey-gooey and so dippable.

    Dips are the best part of any party. I love to cook rich, creamy dips like my ooey-gooey spinach dip for parties, whether I'm hosting or attending. Everyone always loves the flavor, and I love that they're so easy to make.

    Now, I have new recipe for my party rotation. This Marry Me chicken dip combines all the delicious flavors of the classic pasta dish with dippable sensibilities to create a hot, melty dip that always has everyone coming back for more.

    • Boneless Skinless Chicken Breasts: I prefer Springer Mountain Farms chicken breasts for their quality, flavor, and commitment to no antibiotics, hormones, or animal by-products in their feed.
    • Seasonings: A blend of smoked paprika and Italian seasoning gives the chicken a classic, savory Italian flavor with a smoky and sweet note.
    • Sun-Dried Tomato Oil: Sun-dried tomato oil helps sear the chicken and imparts even more flavor.

    Dip

    • Cream Cheese and Sour Cream: A blend of cream cheese and sour cream creates a rich, creamy, tangy base for the dip.
    • Seasoning: Dry shallots, garlic powder, basil, Italian seasoning, and smoked paprika adds classic Marry Me flavor to the dip.

    Instructions

    Chicken

    1: Evenly coat both sides of the chicken with the seasonings.

    2: In a saucepan, sear the chicken breasts in sun-dried tomato oil over medium heat until deep golden brown.

    3: Add enough chicken broth to cover the breasts. Then, cover the pan and braise the chicken breasts until they shred with a fork.

    4: Shred the cooked chicken in a large bowl.

    Dip

    1: Add the sour cream, cream cheese, spinach, sun-dried tomatoes, and seasonings to the bowl of chicken and mix until combined. Then, fold in the mozzarella and parmesan cheese.

    2: Add the dip to a prepared cast-iron skillet and spread it out evenly. Then, top with additional cheese if desired and bake uncovered until bubbly.

    Hint

    For a golden brown finish, broil the dip for a few minutes.

    Storage

    Refrigerate this dip for up to 3 days in an air-tight container or wrap the skillet tightly with plastic wrap. This dip is made with sour cream, so freezing is not recommended.

    To reheat the chicken dip, place the skillet in the oven and bake at 325 until heated through. You can also microwave individual portions at 1-minute intervals until heated through.

    Pairing Suggestions

    Serve this dip with potato, tortilla, or pita chips, veggie sticks, or pretzels. You can also pair it with other great party dishes like honey Buffalo wings, taquitos with guacamole, and sweet potato fries with Big Mac dressing.

    Expert Tips

    • Be sure to add enough liquid to the skillet when braising the chicken breasts. The broth should almost cover the breasts.
    • Chicken is easiest to shred when it's hot. So, shred it immediately if you're using a mixer or as soon as it's safe to handle if you're using forks or shredding claws.
    • You only need to grease your skillet until there is a thin, even coat. Don't go overboard!
    • Watch your dip closely if you broil it for more color. It's so easy to go from golden brown to burned.

    Ingredients
      

    Chicken

    • 1 lb boneless skinless chicken breasts
    • 1 tablespoon sun-dried tomato oil from the jar
    • ¾ tablespoon smoked paprika
    • 1 tablespoon Italian seasoning
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 2 cups chicken broth

    Dip

    • 1 cup sour cream
    • 8 oz cream cheese
    • 1 cup spinach chopped
    • ½ cup sun-dried tomatoes chopped
    • 1 tbsp dry shallots
    • 1 teaspoon garlic powder
    • ½ teaspoon basil
    • 1 ½ teaspoon Italian seasonings
    • 1 teaspoon smoked paprika
    • ½ teaspoon black pepper
    • ½ teaspoon salt
    • 1 cup parmesan
    • 1 cup mozzarella
    • Additional cheese for topping As much as you like

    Instructions
     

    • Coat both sides of the chicken breast evenly with the smoked paprika, Italian seasoning, salt, and pepper.
    • Heat the sun-dried tomato oil in a large saucepan over medium heat and sear the chicken breasts on both sides for 3 minutes until they have a good color.
    • Pour enough chicken broth into the saucepan to almost cover the chicken. Cover and braise for 30 minutes or until the check shreds with a fork.
    • Transfer the chicken to a large bowl and shred it with a hand mixer.

    Dip

    • Preheat the oven to 375 degrees and lightly grease a cast-iron skillet.
    • Add the sour cream, cream cheese, spinach, sun-dried tomatoes, dry shallots, garlic powder, basil, Italian seasoning, smoked paprika, black pepper, and salt to the bowl with the chicken and mix until combined.
    • Fold the parmesan and mozzarella cheese into the mixture until combined.
    • Add the mixture to the prepared skillet and spread it out evenly. Then, top with any additional cheese if you like.
    • Bake the dip uncovered for 20 to 25 minutes until bubbly.
    • For more color, broil the dip for a few minutes until golden brown.

    Notes

    Storage
    • Refrigerate leftovers for up to 3 days in an airtight container. 
    • Don't freeze the dip. The sour cream will separate and make a grainy, watery mess. 
    • Bake the dip at 325 until heated through, or microwave it at 1-minute intervals. 
    Tips
    • When washing chicken, hold it as close to the bottom of the sink as possible and use the lowest water pressure possible to prevent splashing. 
    • Wash the sink and counters immediately after washing the chicken to prevent cross-contamination. 
    • It only takes a minute or two to brown the dip under the broiler. Keep a close eye on it!
